  • Walnuts or pecans, chopped, 2 tbsp

Oatmeal Pancake Diabetic Recipe
Ingredients:
  • Whole wheat flour, 2 cups
  • Brown sugar, ½ cup
  • Baking powder, 4 teaspoons
  • Salt, ½ teaspoon
  • Cooked oatmeal, 1 cup
  • Skimmed milk, 2 cups
  • Egg whites, 4
  • Olive oil or canola, ¼ cup
  • Applesauce, ¼ cup
Method:
Take a bowl and combine the whole wheat flour, brown sugar, baking powder and salt and set aside. Similarly, mix cooked oatmeal, milk, egg whites, olive oil or canola and applesauce together in a bowl and keep aside. Then take a large bowl and combine the two prepared mixtures together and blend well to a smooth batter. Now, heat a non-stick pan and pour ¼ cup of batter on it. You will notice air holes on the surface of your pancake, indicating that it's time to flip sides of the pancake and cook till the other side turns brown as well. Diabetic Oatmeal Cookies
Ingredients:
  • All-purpose flour, 1 cup
  • Egg, 1
  • Rolled oats, 1 cup
  • Raisins,½ cup
  • Margarine, ½ cup
  • Milk, ¼ cup
  • Sucaryl solution, 1 tsp
  • Baking powder, ½ tsp
  • Cinnamon, 1 tsp
  • Salt, ¼ tsp
  • Nutmeg, ½ tsp
  • Vanilla extract, 1 tsp
Method:
Add cream margarine, beaten egg, milk and sucaryl solution in a bowl. Mix and stir it well. Mix the remaining dry ingredients together and add it to the above mixture. Finally, add vanilla extract, rolled oats and raisins and blend well. Take a greased cookie sheet and slowly drop a teaspoon of the batter onto it and bake. Instead of using full amount of margarine, you can also use ¼ cup of applesauce or 1 banana with ¼ cup margarine.

Diabetic Breakfast Oatmeal
  • Quick cooking oats, 1½ cup
  • Medium apple, cut in cubes, 1
  • Skim milk, 3 cups
  • Raisins, 1/3 cup
  • Toasted raw unsalted sunflower seeds, 3 tsp
  • Maple extract, ½ tsp
  • Equal, 2½ to 3½ tsp
  • Salt ground cinnamon, 2 to 3 dashes
Method:
Take a saucepan and combine oats, milk, raisins, apple cubes, maple extract and sunflower seeds. Now cook this mixture over medium heat and constantly keep stirring. Boil it until the mixture thickens. This will take about 2 to 3 minutes. Then stir in the sugar substitute and you are done. Flavor with powdered cinnamon before serving.
