Non-Dairy Ice Cream
If you are a vegan, you do not have to be deprived of ice cream, when there are non dairy ice creams available. At the same time, making these ice creams at home is also not a difficult task, if you have the recipe for the same.

Non Dairy Ice Cream Recipe
One does not have to keep rushing to the market looking for non dairy ice cream, whenever one feels like having an ice cream. Here is a simple ice cream recipe, which you can use and make soothing ice cream at home. Although this recipe makes chocolate ice cream, you can alter the recipe to suit your taste buds. For example, for homemade vanilla ice cream, you can use vanilla extract and do away with cocoa powder. Having said that, let's turn towards how to make ice cream at home.
Ingredients
- 5 cups soy milk or almond milk or coconut milk
- 2 cup soy milk powder
- ½ cup cocoa powder
- 1 ½ cups sugar
- 1 cup powdered sugar
- 1 tbsp cider vinegar
- Blend soy milk with soy milk powder and vinegar till all the ice cream ingredients are well mixed.
- Pour the soy milk mixture in a saucepan and add sugar and powdered sugar to it, along with the cocoa powder. Let the mixture come to a boil over medium-low heat.
- When the mixture is coming to a boil, ensure you continue to stir constantly.
- Let the mixture cook till it is thick and syrupy. It should resemble a pudding.
- Then pour the mixture in a metal pan and place it in the freezer without covering it for about an hour.
- Once the mixture thickens, remove the pan from the freezer and scrap it and place it in a blender.
- Blend the mixture on high for 30 to 40 seconds, so that the mixture is creamy.
- Now pour the mixture in a pan and place it back in the freezer.
- You will have to repeat the procedure 3 times after every 30 to 45 minutes, after which let the ice cream freeze for an hour and half before you serve it.
- You can add toppings of your choice, if you want to, on this ice cream.
Now we will turn towards non dairy ice cream cake. The recipe to make is not difficult.
Ingredients
- Non dairy ice cream
- 650 gm silken tofu
- 310 gm barley malt chocolate chips
- 3 tbsp maple syrup
- Moist cake
- It is best to use a freshly baked cake.
- Cut the cake lengthwise into two pieces.
- Place one part in the pan and spoon ice cream on the cake. The layer of ice cream layer should not be more than an inch.
- Now place the other part on the cake.
- Melt the chocolate chips, as you constantly stir it.
- Then pour the chocolate in a blender and add tofu to it.
- Blend the ingredients until its smooth.
- Now you can add the maple syrup and blend it again.
- Pour the mixture on the cake and freeze it overnight, till it is firm. If possible you may want to freeze it a little longer.
