Whether you are struggling to meet the rising demands of your children, or whether you just want heat it up in the kitchen, its nice to keep a few no bake cookies stowed away somewhere in the house. You never know when you’ll next need them!

When you think of no bake cookies, the first things that will probably pop into your head would be the perennial favorites of Frosted Graham Crackers and Rice Krispie Treats. I’m assuming of course that everyone has the recipe for Graham Cracker and Rice Krispie’s. Consider adding a dash of pizzazz to these already delicious recipes but including dried fruit pieces, chocolate chips or even cinnamon candies.

For chocolate rice Krispie treats, all you have to do is melt two thirds of a cup of chocolate chips with butter and marshmallows. This is a favorite amongst the kids and everyone loves the chocolate version more than the regular rice Krispie’s.

To make Frosted Graham Crackers, choose your favorite frosting flavor and sandwich this between two graham crackers. A frosting with a sugar base that is powdered will set firmly and won’t turn out to be messy.

Cranberry Coconut Bars

Cranberry Coconut bars are more for bigger kids because they have too many nuts and too much fruits and the smaller kids are not too fond of them. But it is so easy to make and is simply scrumptious that I just had to include this recipe in here. So, if you are making lunch for your spouse or your teenage son, then this recipe is sure to be a hit.

This is your regular microwave cookie that can even be mixed in a baking pan. What can be more convenient? If you aren’t particularly fond of dried cranberries, then substitute it with raisins, chopped apricots or dates.

Ingredients:
  • ½ a cup of butter
  • ½ a cup of brown sugar
  • One and half cups of quick rolled oats
  • ¼ cup of light corn syrup
  • ½ a cup of dried cranberries
  • ½ a cup of sweetened coconut flakes
  • ½ a cup of walnut pieces
Procedure:
  • Place the butter in a microwave-baking dish and microwave it until the butter melts.
    · Stir the brown sugar in the butter until it dissolves completely. Once this is done, stir in the remaining ingredients and then press this mixture firmly in the dish.
  • Microwave this mixture for about five minutes until it turns light brown.
  • Let the cookies cool down and then use a sharp knife to cut them into bars. Wrap each cookie to pack in a lunch box.
Chocolate Peanut Butter Drops

This recipe is the best kid cookie recipe ever. Although it is very confection-like, it is so packed with oats and energy that you really wouldn’t mind letting your kids sample this treat. This cookie tastes best with a big glass of milk.

Ingredients:
  • 2 cups of sugar
  • ½ a cup of milk
  • ¼ cup of butter
  • 1/3 cup of cocoa
  • Two and a half cups of quick oats
  • ½ a cup of peanut butter
  • ½ a tablespoon of vanilla extract
Procedure:
  • Mix the milk, sugar, cocoa and butter together in a medium sized saucepan. Cook this mixture over a medium flame and stir occasionally until the whole mixture starts to boil. Cook for about two minutes while stirring constantly and remove the saucepan from the heat.
  • Next, stir in the vanilla and peanut butter, and then the oats.
  • Let the mixture cool down first and then drop about two spoonfuls onto a waxed paper. Once the cookies are completely cooled only then remove them from the waxed paper.
