Sweet potatoes, being a versatile food item, blend well with lime, honey, ginger, nutmeg, cinnamon, and other culinary herbs. And the most interesting part is that it hardly takes 10 minutes to microwave them. Hence, within no time, you can cook and serve yummy, healthy sweet potatoes. While purchasing them from the market, choose deep-orange colored sweet potatoes as they contain the highest nutrient value.

Buttery Sweet Potatoes

Ingredients

Sweet potatoes, 2 (medium-sized)
Salt, pepper, cinnamon, and butter to taste
Directions

First, wash the sweet potatoes thoroughly by placing them under running water.
Clean eyes on the sweet potato to remove any dirt attached to them.
Lightly scrub skin and remove woody parts and bruised portion (if any).
Punch them several times with a stainless steel fork.
Place the sweet potatoes on a microwave-safe plate and cook on high for about 6 minutes.
Turn the sweet potatoes and continue to microwave for another 6 minutes.
Sprinkle salt and pepper to the cooked sweet potatoes and serve with cinnamon and butter.

Sweet Potato Chips

Ingredients

Olive oil, 1 tbsp.
Black pepper powder, 1 tbsp.
Sweet potatoes, 2 (medium-sized)
Directions

Wash the sweet potatoes, rubbing more over the eyes to remove dirt.
Peel the skin and make thin slices, ensuring that they are evenly cut.
In a bowl, add the olive oil, black pepper powder, and other spices as per your preference.
  • Toss the sweet potato slices and the spices for even coating.
    Arrange the slices on a microwave safe plate in a single layer.
    Microwave the sweet potato slices for about 2 minutes per side.
    After 2 minutes, turn slices and cook for another 2 minutes.
    Remove the crispy sweet potato chips from the microwave and serve.

    Sweet Potato and Honey

    Ingredients

    Sweet potatoes, 2 (medium-sized)
    Honey, 4 tsp.
    Ginger powder, 2 tsp.
    Cinnamon, 1 tsp.
    Salt and pepper to taste
    Directions

    Wash and clean the sweet potatoes thoroughly. To allow moisture evaporation, prick them with a fork or with the tip of a knife.
    In a microwave safe plate, cook the sweet potatoes on high for about 6 minutes.
    Turn them and microwave the other side for another 6 minutes.
    Allow the baked sweet potatoes to cool down and cut them into half longitudinally.
    Scoop out the cooked pulp, while keeping the shell intact.
    In an electric mixer, add pulp, honey, ginger, cinnamon, pepper, and salt, and blend the mixture for 2-3 minutes.
    Add the mixture into the baked potato shells, cover them, and microwave at high setting for 3-4 minutes.
    Serve this with margarine and pecans.

    If you have a hectic schedule, you can consider baking many sweet potatoes at a time on holidays and storing them by placing them in the freezer.
