Easy Mexican Deserts
Sopapilla Cheesecake Pie
Ingredients
- Honey - ¼ cup
- Butter (room temperature) - ½ cup
- White sugar - 1 cup, ¾ cup
- Crescent rolls can (refrigerated) - 2 (8 ounces each)
- Mexican vanilla extract - 1 teaspoon
- Packaged cream cheese (softened) - 2 (8 ounces each)
- Ground cinnamon - 1 teaspoon
To prepare this Mexican food, first grease a baking pan of appropriate size and preheat the oven to 350 degrees Fahrenheit. Then with the help of electric mixer, beat the mixture of cream cheese, vanilla extract and one cup of sugar. Beat the mixture until it turns smooth. Then prepare two rectangle shaped large pieces (same as the size of baking pan) from the crescent roll dough. Place one piece at the bottom of the baking pan and spread the mixture of cheese, vanilla and sugar over it and cover the mixture with the left rectangular dough piece. Now, prepare a mixture of cinnamon powder, butter and ¾ cup of sugar and scatter this mixture on the top of the cheesecake. Bake the cheesecake for 30 minutes, until the dough turns golden brown. After removing from the oven, drizzle some honey over the cheesecake and once it cools, cut it into equal pieces.
Capirotada
Ingredients
- Butter - ¼ cup
- Cinnamon stick - 1
- Anise seeds - 1 teaspoon
- Pecans (chopped) - ⅔ cup
- Piloncillo/Brown sugar - 3 cones/2 cups
- Water - 1¼ cup
- Queso fresco (crumbled) - ½ cup
- Orange zest - 1 tablespoon
- Lemon zest - 1 teaspoon
- Cloves - ½ teaspoon
- Egg yolks - 4
- Salt - 1 pinch
- Sherry - ¼ cup
- Milk - 4 cups
- Cinnamon powder - 1 teaspoon
- Apples - ⅔
- Raisins - 1 cup
- Mexican bread (cut into large chunks) - 6 cups
Preheat the oven at 350 degrees Fahrenheit. Soak the raisins in warm water so that they become soft. Then peel and chop the apples into small pieces. Take a small saucepan and put anise seeds, piloncillo, cinnamon stick and water in it. Boil this mixture for about 6 minutes, until it attains a syrup like texture. Then melt the butter in a pan and fry the bread pieces in the melted butter until they turn golden brown. Take a large mixing bowl and add pecans, orange and lemon zest, raisins, cheese and apple cubes. Mix these ingredients properly and then sprinkle cinnamon powder and cloves and again toss them properly to mix. Add the fried bread pieces to this fruit mixture and mix the ingredients properly. Now, take a buttered baking dish and pour half of the bread-fruit mixture into it. Then pour some syrup over it and again add the remaining bread-fruit mixture and syrup.
Place this mixture in the preheated oven and bake it for 35 minutes. In a medium-sized bowl, beat the egg yolks with the help of electric mixer until it turns smooth and foamy. Then combine milk, sherry and salt with the egg yolk and again beat until the mixture turns smooth. Pour this egg yolk mixture over the partially cooked bread-fruit mixture and bake the mixture for 35 more minutes until the top of the mixture turns golden brown.
Churros
Ingredients
- Salt - ½ teaspoon
- Vegetable oil - 2 tablespoons
- All-purpose flour - 1 cup
- Oil - 2 quarts
- White sugar - ½ cup
- Water - 1 cup
- Cinnamon powder - 1 teaspoon
- White sugar - 2½ tablespoons
Combine sugar, vegetable oil, water and salt in a saucepan and heat this mixture over medium heat to boil. Remove the saucepan from heat and add flour into this mixture to form ball. Now, take a deep skillet and heat the oil to 375 degree Fahrenheit. With the help of pastry bag, pipe strips of dough into the hot oil. Fry these pipes until they turn golden brown and then blot them over paper towels. Then, combine cinnamon powder and sugar and roll the fried drained churros in this mixture.
