Matzo Ball Soup Recipe

Matzo Ball Soup Recipe
Ingredients
For the Matzo Ball
Eggs - lightly beaten (2)
Unsalted butter - melted (2 tablespoons)
Dried dill/fresh dill (1/2 teaspoon)
Vegetable stock (2 tablespoons)
Minced flat leaf parsley (1 tablespoon)
Salt (1/2 teaspoon)
Unsalted matzo meal (1/2 cup – available in any store that stocks Jewish food products)
For the broth:
Vegetable stock (6 cups)
Onion - coarsely chopped (1)
Olive oil (2 tablespoons)
Bay leaf (1)
Celery - coarsely chopped (1 stalk)
Carrots - Chopped - 1/4 inch slices
Coarsely chopped parsley (1/4 cup)
Salt and pepper
Green onions with the green parts - coarsely chopped (2)
Preparation
First, let’s begin with the preparation of the Matzo balls. In a medium sized bowl, stir together eggs, vegetable stock and butter. Next add the Matzo meal along with some parsley. Also add dill and sprinkle around ½ teaspoon of salt. Stir the ingredients well. Place a cover over it and refrigerate it for a maximum of 8 hours.
Your next step would be to bring to boil a large pot of water over high heat. Add some salt to it. Form around 12 balls of the dough. These should be 1-inch approximately. Then, you need to drop the balls into the boiling water. Once done, reduce the heat and let it simmer for half hour. Ensure the Matzo balls are tender.
Meanwhile, you can prepare the soup. Add the onions, carrots and celery in a large pot along with some olive oil. Cook it for about 5 minutes till the vegetables get cooked well. Now, add some salt and pepper. Also add some stock and bay leaf and boil the preparation over high heat. Then, reduce the heat and let it simmer over low heat for 20 minutes. Next, you need to add the parsley along with the green onions. Cook this for an added 10 minutes. Once done, remove the bay leaf. Use the seasonings as per the flavor required. While serving, place the Matzo ball in a bowl and pour the hot soup over it.
Generally, ingredients for the Matzo balls remain the same but you can change the consistency of the same. In this case, you can make them really solid or light, which would depend upon your preference.
