Mashed Potato and Ginger-Garlic Pancake
Ingredients
- Potatoes (mashed), 1 cup
- Lightly beaten egg, 1
- Minced garlic, ¼ tsp
- Chopped ginger, ¼ tsp
- Italian seasoning, ½ tsp
- Vegetable oil, 1 tbsp
Mix mashed potatoes, ginger, garlic, seasoning and eggs together in a bowl. In a heavy skillet, heat oil. Meanwhile, make golf ball sized balls of the mashed mixture, place it in the skillet, and flatten evenly with a spatula. Cook it, until brown and crispy on both sides, serve hot with a sauce of your choice.
Pancake with Herbs and Mashed Potato
Ingredients
- Baking potatoes, 3
- Minced garlic, 2 cloves
- Ground black pepper, ½ tsp
- Fresh chopped parsley, ½ tsp
- Fresh chopped rosemary, ½ tsp
- Milk, 1 cup
- Salt, to taste
- Butter, 6 tbsp
Peel and slice potatoes, boil them in a large saucepan, until tender. Drain and fork top mash, make sure no pieces are left. Heat the butter in a skillet, add the garlic. Saute until garlic turns pink. Cook over low heat just until the garlic starts to color. Set aside the skillet, let it cool down. Add milk gradually to the bowl with potatoes, until you get the right consistency for the pancakes. Stir in the butter and garlic along with the seasoning. Baked Pancakes
Ingredients
- Baking potatoes, 1½ pound
- Sour cream, ½ cup
- Butter, 1½ tbsp
- Grated Parmesan cheese, 2 tbsp
- Garlic, 2 cloves
- Chopped fresh thyme, ½ tsp
- Chopped fresh sage, ½ tsp
- Chopped fresh mint, ½ tsp
- Chopped chives, 1 tbsp
- Crushed dried red chillies, ¼ tsp
- Salt, to taste
These pancakes with cheese are an absolute delight to savor. In a large pot, boil water, add peeled and chopped potatoes, boil until they become tender. Drain potatoes, and fork them to mash them. In the 3-quart pot, cover the potatoes and garlic with water, add salt, and bring to a boil. Reduce heat to medium and cook until potatoes are fork tender. Drain. Spoon in the butter, sour cream and Parmesan cheese along with all chopped herbs. Spread the mixture in a prepared baking dish, sprinkle crushed dried red chillies, and bake in a preheated oven to 350° F, until golden brown and crispy. Serve hot.

- Finely chopped sausage, ½ cup
- Chopped onion, 2 tbsp
- Milk, ½ cup
- Butter, 2 tbsp
- Salt and pepper, to taste
Mix all ingredients together, except milk. Add enough milk to get the desired consistency for making pancakes. Heat oil in a skillet, drop a ladle of mashed potatoes in it, and flatten with a spatula. Cook until, brown and crispy in both sides. Serve hot.
