When you make macaroni and cheese at home, it is usually a simple layer of cooked macaroni, shredded or sliced layer of cheese topped with salt and pepper. Macaroni and Cheese with Bacon

Ingredients
  • Uncooked Elbow Macaroni – 2 Cups
  • Bacon – ¼ Pound
  • Evaporated Milk – 1 Cup
  • Worcestershire Sauce – 1 Teaspoon
  • Grated Onion – 2 Tablespoon
  • Flour – 3 Tablespoons
  • Butter – 2 Tablespoons
  • Shredded Cheddar Cheese – 6 Ounces
  • Salt & Pepper – To Taste
Directions
  • Cook the macaroni in boiling salted water as per the directions provided. Drain the cooking liquid into a measure of 2 cups. Add a little water if required.
  • Fry the bacon and drain off all the fat after keeping one tablespoon of it aside.
  • In the macaroni cooking liquid, add the bacon fat and butter and set it on medium flame. Stir in the flour and then the evaporated milk with 2 cups of water.
  • Stir the mixture continuously till it starts boiling.
  • Season the mixture with salt, pepper, onion and Worcestershire sauce.
  • Add the cheese and heat the mixture slowly till all the cheese melts
  • Now add in the macaroni and heat it the entire mixture is piping hot.
  • Serve hot with crumbled bacon on top.
Macaroni and Cheese Croquettes

This is a very useful recipe as you can make croquettes with the leftover cheese and macaroni.

Ingredients
  • Leftover Cheese and Macaroni
  • Beaten Eggs - 2
  • Bread Crumbs – 1 Cup
  • Oil for deep frying
Directions
  • Heat the oil for a while till a cube of bread brown when fried in it turns brown in 30 seconds.
  • Shape the macaroni and cheese into small balls. Dip these balls into the bread crumbs, beaten eggs and then the crumbs again. Now, drop the balls carefully into the oil and cook in the oil for a minute or till they turn deep brown. Remove the croquettes to paper towels to drain.
  • Serve hot with some tomato sauce.
Macaroni and Cheese with Tuna

Ingredients
  • Uncooked Elbow Macaroni – 8 Ounces
  • Cream of Mushroom Soup – 1 Can
  • Tuna (flaked and dried) – 1 Cup
  • Milk – ¾ Cup
  • Shredded Cheddar Cheese – 3 Cups
  • Salt & Pepper – To Taste
Directions
  • Cook the macaroni in boiling salted water as per the directions provided.
  • Add the cream of mushroom soup, milk, tuna, pepper, salt and 2 cups of shredded cheese to the macaroni. Mix the entire mixture.
  • Transfer the mixture to a shallow and lightly buttered baking dish.
  • Sprinkle the remaining cheese over the macaroni and bake for about 40 minutes at 350 Degree.
Macaroni and Cheese with Green Chiles

Ingredients
  • Cooked Macaroni – 6 Cups
  • Cheese Sauce Mix – 2 Packages
  • Diced Onion – 1 Cup
  • Shredded Cheddar Cheese – 3 Cups
  • Milk – ¾ Cups
  • Green Chiles – 1 Can
  • Butter – 4 Ounces
Directions
  • In a medium sized sauce pan, make the cheese sauce as per the directions provided.
  • Add in 1 cup of cheese and the diced green chiles.
  • In a small frying pan, sauté the onion in butter until is turns golden brown in color.
  • Add the onion in the cheese sauce and mix well.
  • Spread the precooked macaroni in a casserole dish and mix in the cheese sauce.
  • Top the casserole with the remaining cheese and bake for 30 minutes at 350 degrees.
