Easy Banana Bread

Ingredients
  • ripe bananas, 3 medium size
  • flour, 2 cups
  • unsalted butter, ½ cup
  • eggs, 2
  • sour cream, ½ cup
  • sugar, 1 cup
  • baking powder, 1 tsp
  • baking soda, ½ tsp
  • salt, ½ tsp
  • vanilla extract, 1 tsp
Directions

Sift the flour, baking soda, salt and baking powder together over a flat plate. In a bowl, cream the butter, gradually add the sugar, add eggs one at a time, beating well with an electric mixer after each addition. Stir in the vanilla extract. Peel bananas, cut them into small pieces, and mash them with a fork. Measure out 1 cup of mashed banana, add the sour cream and stir, until well blended.

Blend together 1/3 of the dry flour mixture into the butter mix. Keep adding the banana mix and the remaining dry flour mix alternately, stirring well after each addition. Pour the bread batter into the prepared loaf pan and smooth the top with a spoon. Bake in a preheated oven to 325oF. Insert a bread knife into the center of the bread, to check if it comes out clean. Transfer the bread to a cooling rack and let it to cool down completely.

Banana Nut Bread

Ingredients
  • ripe bananas, 3
  • chopped walnuts, ½ cup
  • flour, 1½ cups
  • eggs, 2
  • unsalted butter, 4 ounces
  • sugar, 1½ cups
  • baking soda, 1 tsp
  • vanilla extract, 1 tsp
Directions

In a bowl, sift flour and baking soda together. In another bowl, using an electric beater, beat sugar, eggs, vanilla and butter together. Blend the flour, until the batter is smooth. Mash bananas with a fork, add chopped walnuts to it, and set aside. Pour the batter into two greased loaf pans. Bake in a preheated oven (375oF), for about 55 minutes. Cut slices, pour some honey over it and enjoy your banana nut bread recipe!

Banana Nut and Oats Bread

Ingredients
  • self raising flour, 2½ cups
  • ripe mashed bananas, 2
  • sugar, ½ cup
  • milk, 1 cup
  • eggs, 2
  • shredded coconut, 1 cup
  • honey, ½ cup
  • chopped walnuts, ½ cup
  • rolled oats, 1 cup
  • rolled oats and walnuts mix, 1 tbsp
Directions

In a large bowl, mix eggs, sugar, bananas, milk and honey. Blend in the flour, shredded coconut, rolled oats and walnuts. Make sure no lumps remain. Pour the batter into a greased loaf pan, sprinkle rolled oats and walnuts on top. Bake in a preheated oven to 180oF, until the bread knife comes out clean.
