Lobster Pie Recipes

Canadian Lobster Pie
Ingredients
- 2 cup chopped lobster
- 2 tbsp flour
- 4 eggs yolk, well beaten
- Melted butter
- 1½ cup light cream
- Pastry for 1 crust pie
- Salt and pepper to taste
In a skillet, fry lobster in the ¼ cup melted butter at medium heat. Melt 6 tbsps of butter in the pan and stir in flour until smooth. Add cream, salt and pepper and stir continuously until thick. Stir a small quantity of hot mixture into the egg yolk and then stir the hot mixture. Add lobster and turn the mixture into a casserole. Cover with a pie crust and bake at 375°F until the crust turns brown.
Publick House Lobster Pie
Ingredients
- 3 cups cut-up lobster, cooked
- ½ cup butter
- 2 tbsp flour
- 1½ cup cream
- ½ cup sherry (dry)
- ½ tsp salt
- 4 eggs yolk
- 2 tbsp grated Parmesan cheese
- 2/3 cup crushed potato chips
- 2 tsp paprika
- ¼ cup melted butter
- ½ cup cracker meal
In a pan, melt ¼ cup butter and add sherry; boil for 2-3 minutes. Remove from the heat and add lobster meat to it. Stir well and set aside. Drain the butter and sherry mixture into another bowl. In the top of a double boiler, melt ¼ cup butter over simmering water. Stir in flour and salt and add the drained butter and sherry mixture to it. Cook and stir until thick. Beat the egg yolk and stir the hot sauce. Cook over simmering water for 3-4 minutes and stir well. Add lobster and transfer the mixture into a shallow baking dish. Mix all the toppings together and sprinkle over the lobster pie mixture. Bake in a slow oven at 300°F for 15-20 minutes.
Italian Lobster Pie
Ingredients
- ½ pound lobster meat, cut in small pieces
- ½ pound skim milk ricotta cheese
- ½ pound mozzarella cheese, chopped
- 2 eggs, beaten
- 1½ cups water
- 2 tbsp Italian seasoned bread crumbs
- ¼ cup long-grain rice
- 1 small onion, chopped
- 2 tbsp milk
- 1/10 tsp black pepper
In a saucepan, boil water and add rice to it. Cover and simmer at low heat for 22-25 minutes and drain. Add the ricotta cheese, eggs, lobster meat, mozzarella cheese, onion and black pepper; stir well. Butter the baking dish and coat with bread crumbs. Spoon the mixture into the dish and pour milk over it. This will turn the top crusty and brown after baking. Bake at 350°F for 45-50 minutes or till a knife inserted in the middle comes out clean.
