Lemon Caper Sauce Recipes

. . With Chicken Broth
Ingredients
  • 2 tablespoons lemon juice
  • 4 ounces reduced sodium chicken broth
  • 1- 1½ teaspoon capers
  • 1- 1½ teaspoon All-purpose white flour
  • ¼ teaspoon white or black pepper
  • ¼ cup white wine
  • 2 tablespoons unsalted butter
Preparation
In a small bowl, mix lemon juice, capers, pepper and wine and keep aside. In a frying pan, take two tablespoons of butter and heat on a low flame. Once the butter melts fully, add in the flour and fry for a few minutes. Add chicken broth into the frying pan and keep on stirring for a minute or two. Pour the lemon juice and caper mixture into the pan and let it cook for 4-5 minutes. Do not stop stirring till the sauce becomes thick. Remove from flame and your sauce is ready!

Ingredients
  • 4 tablespoons butter
  • 1 teaspoon lemon rind
  • 2 teaspoon capers
  • 2 tablespoons lemon juice
  • 1 small clove garlic
  • Parsley
Preparation
Wash and drain the capers and if they are large, cut them, along with the garlic, into small pieces. Take butter in a small frying pan and heat the butter. As the butter starts melting, add capers, lemon juice, garlic and lemon rind. Cook on a low flame for 30 seconds and once the sauce thickens, add parsley and stir for half a minute. This sauce goes well with turkey cutlets, tuna steaks, salmon fillets and chicken breasts as well.

Ingredients
  • 6 ounces chicken breast halves, skinned and boned
  • 4 ounces all-purpose flour
  • ¼ cup lemon juice
  • 8 ounces fresh mushrooms
  • Salt- to taste
  • ¼ cup dry white wine
  • 2 tablespoons olive oil
  • 2 tablespoons capers, drained
  • ¼ cup cold unsalted butter
  • 2 lemon wedges
Preparation
Chop the cold unsalted butter into cubes and set aside. In a medium-sized bowl, combine salt and flour and mix well. Take olive oil in a frying pan and heat on a medium flame. Fry the chicken in the oil for 3-4 minutes on each side till it turns brown. When the chicken is thoroughly cooked, remove from heat. Take white wine in the same frying pan and let it boil. Pour in the lemon juice and bring back to boil. Put in the cold butter, but do not let the butter set in slowly. The butter should dissolve as quickly as possible, or else there is a chance of the sauce becoming oily. As the butter gets fully absorbed, take off from the heat and add in the mushrooms and capers. The final touches of this recipe require that you transfer the cooked chicken in a serving dish and serve by garnishing it with the sauce.

Ingredients
  • 6 ounces salmon fillets
  • 4 teaspoons capers
  • ½ teaspoon lemon zest
  • ½ teaspoon salt
  • 2 cloves garlic, finely minced
  • 3 teaspoons of lemon juice
  • ¼ low sodium chicken broth
  • 1/8 teaspoons black pepper, freshly grounded
  • 4 teaspoons drained capers
  • 1/2-1 teaspoon of lemon wedges
Preparation
Coat the salmon fillets with salt and pepper and set aside. Heat a large frying pan and cook the salmon for 5 minutes, each side. Remove the fish from the pan, and in the same frying pan, stir in the capers and let cook for some minutes on medium flame. Put in the garlic and stir till they turn golden in color. Pour in the lemon juice, chicken broth and also add lemon zest. Stir the sauce frequently and remove from heat once the sauce thickens. Pour over the pieces of salmon and garnish with a lemon wedge on top.
