Lavender Cookies

Simple Lavender Cookies
Ingredients
- All-purpose flour, 1 cup
- Dried or fresh lavender flowers, 1½ tablespoons
- Powdered sugar, ½ cup
- Butter, melted, ¾ cup
- Egg, large, 1
Take a large bowl and sift the all-purpose flour in it. Add the dried or fresh (according to your preference) lavender to the flour and mix the ingredients together. In a separate bowl, mix the melted butter and powdered sugar. Beat the egg into the butter mixture and combine well. Now transfer this mixture to the flour, stirring occasionally to avoid lumps, spoon in the batter on a well greased cookie tray and bake it in a preheated oven at 175 ºC till the cookies become golden brown. Cool the cookies for about 15 minutes and sprinkle decorative sugar on top.
Lavender and Lemon Cookies
Ingredients
- All-purpose flour, 2½ cups
- Dried lavender buds, ground, 1½ teaspoons
- Lemon peel, finely shredded, 2 teaspoons
- Butter, softened, 1 cup
- Powdered sugar, 1 cup
- Salt, ¼ teaspoon
- Milk, ¼ cup
Take a large mixing bowl and combine the all-purpose flour, salt, lavender buds and lemon peel. Blend ¾ of the butter with the powdered sugar and combine the flour mixture to it till a dough is formed. Roll the dough into a long log of about 10 inches and wrap it in a butter paper. Freeze the cookie dough in the refrigerator till it becomes firm. Take out the dough and let it return to room temperature. With the help of a cookie cutter, shape out the cookies and bake them in a preheated oven at 350 ºF for about 10 minutes, till they become golden brown. Remove them from the oven and let them cool down.
For the cookie frosting, blend the remaining butter with milk and powdered sugar till it becomes consistent. You can also add shredded lemon peel or lavender buds to the frosting. With the help of a spatula, spread the frosting on the cookies. Sprinkle shredded lemon peel for garnish. Your lemon cookies are ready to be enjoyed.
Lavender and Honey Cookies
Ingredients
- All-purpose flour, 1½ cups
- Fresh or dried lavender blossoms, 2 tablespoons
- Honey, 3 to 4 tablespoons
- Baking powder, 1 teaspoon
- Unsalted butter, softened, ½ cup
- Confectioners' sugar, ½ cup
- Salt, ¼ teaspoon
Take a medium-sized bowl and blend together the unsalted butter, confectioners' sugar and honey, and keep it aside. In a large bowl mix the flour, lavender, baking powder and salt. Transfer the butter mixture to the large bowl and form a dough. Roll this dough on a parchment paper and refrigerate it for about 2 hours. After two hours remove the dough and shape the cookies with a cookie cutter. Place parchment paper on a baking tray and place the cookies on it. Bake these cookies in the oven preheated at 350 ºF for about 10 minutes.
Lavender Cookies with Rose Water Icing Recipe
Ingredients for the Cookies
- All-purpose flour, 2 cups
- Lavender blossoms, crushed, 2 teaspoons
- Powdered sugar, 1 cup
- Baking powder, 2½ teaspoons
- Eggs, large, 2
- Butter, softened, ½ cup
- Salt, ¼ teaspoon
- Rose water, ¼ cup
- Powdered sugar, 2 cups
- Water, 6 tablespoons
In a medium-sized bowl, beat the eggs along with the crushed lavender blossoms, salt and baking powder. In a separate bowl, blend the powdered sugar and butter together. Now mix all the ingredients with the flour till a smooth batter is formed. On a greased cookie tray, spoon the batter in the shape of cookies and bake it in a preheated oven at 180 ºC for about 15 minutes. Till the cookies are getting baked, you can prepare the icing.
For the icing recipe, blend together the powdered sugar, rose water and plain water. Remove the cookies from the oven and let them cool completely. Once the cookies are cooled, drizzle this icing on the cookies and serve them with piping hot cocoa. For a different taste you can also make almond butter cookies that will simply melt in your mouth.
Decorating the cookies will make them more appealing that kids and even elders won't be able to resist them. Serve these cookies on any occasion or just enjoy them during your tea time. Have fun!
