Yummy breakfast or midday snack, pancakes are thin and flat and are made of batter. Pancakes can be plain or stuffed, topped with syrups or just dusted with some powdered sugar. Homemade Pancakes
Ingredients:
- All-purpose flour, Sugar, 2 tbsp
- Baking powder, 1 tsp
- Buttermilk, 1 cup
- Egg, 1
- Salt, ¼ tsp
- Ripe yellow bananas, 2
Sift flour, baking powder, sugar and salt in a large bowl. Pour the buttermilk, and lightly with a fork, stir in the egg, butter and chopped ripe bananas. Mix it well, but do not smash the bananas too much. Heat a heavy skillet, drop some butter on it. Take a large ladle, scoop ready batter and pour it onto the hot pan. Give it a quick spread, depending upon the thickness desired. Flip sides and cook until both sides are golden brown in color. Serve warm.
Healthy Pancakes
Ingredients:
- Whole wheat flour, 1 cup
- Rolled oats, 1 cup
- Blueberries, 1 cup
- Mashed ripe banana, 1
- Baking powder, 2 tsp
- Salt, ½ tsp
- Maple syrup, 2 tbsp
- Eggs, 2
- Buttermilk, 1½ cup
- Melted butter, 5 tbsp
In a large bowl, sift together wheat flour, rolled oats, baking powder and salt. Pour in the maple syrup, buttermilk, egg, butter and banana one by one, stirring the mix continuously. Spoon in the blueberries and very lightly stir it in. Heat a griddle and melt some butter on it. Use a ladle or a cup, pour a measure of ¼ cup onto the griddle and cook flipping sides, until both sides are well browned. Serve with an extra serving of maple syrup poured over the pancakes and garnish with some blueberries.
Sausage Pancakes #1
Ingredients:
- All-purpose flour, 1 cup
- Buttermilk, 1 cup
- Cooked, chopped sausage, ½ pound
- Egg, 1
- Salt, ½ tsp
- Cooking oil, 1 tbsp
- Baking soda, 1 tsp
Mix together flour, baking powder, salt and baking soda in a large bowl. In another bowl, beat the eggs, milk and oil. Stir into dry ingredients, and add sausages. Fold all ingredients very lightly. Sausage Pancakes #2
Ingredients for Pancakes:
- Wheat flour, 1 cup
- Whole milk, 1 cup
- Mushrooms, ½ cup
- Egg, 1
- Oil, 2 tbsp
- Sugar, ½ tbsp
- Salt, ½ tsp
Ingredients for Filling:
- Oil, ½ tbsp
- Mushrooms, 1 cup
- Parsley, ½ cup
- Garlic, 1 clove
- Black pepper, 1 tsp
In a bowl, whisk eggs with some milk, gradually add flour, oil and the remaining milk. Season with salt, sugar and pepper. Stand batter for one hour. In a fry pan, stir fry sliced mushrooms, add salt, pepper and parsley. Chop cooked mushrooms further more and stir it into the batter. Pour ½ cup quantity of batter onto a greased and heated skillet, cooking both sides until browned.
