How to Make Mozzarella Cheese

Mozzarella cheese originated from Italy and is one of the several kinds of "plastic yogurt" cheeses. Here is a recipe to make mozzarella cheese at home.
What is life without cheese sandwiches? Cheese is a dairy product made from cow, goat and buffalo milk. Cheese could be made from skimmed milk also. If you want to have fresh cheese for your breakfast or dinner, try making it at home. Always remember, to use fresh milk regardless the source of milk. If you are using the milk bought from the departmental store ensure to check the date. Another point worth mentioning is keeping the milk in the refrigerator until ready for use. One of the cheeses made at home is mozzarella. Do you remember the creamy sticky cheese, which is a main ingredient in a pizza. Pizza would be nothing but a flat round bread without "mozzarella cheese".

Making Mozzarella Cheese at Home

Mozzarella is popularly known as pizza cheese. It melts easily and is used not only as a pizza-topping but also in many other western dishes such as shepherd's pie, mushroom, chicken pie and many more. Mozzarella of the finest quality is usually made from either buffalo milk or cow milk. Try making mozzarella cheese at home using the following recipe.

Ingredients
  • ¾ tsp liquid rennet
  • 2 gallons milk
  • 3 tsp citric acid
  • ¾ cup cool water
Step 1
In ½ cup cool water dissolve the citric acid. Transfer the milk to a thick bottom vessel and add the dissolved citric acid. Heat the milk stirring continuously and when it starts boiling add the liquid rennet mixed with ¼ cup water. Simmer the flame and stir the milk for couple of minutes and remove from the flame. Do not disturb the milk for 15 minutes or till the yogurt is formed.

Step 2
This step is called cutting and cooking the yogurt. Once the milk is clabbered using a stainless steel knife cut the yogurt into small chunks. Put this pot into a basin filled with water. Transfer the basin to a stove and heat the yogurt to 100 degrees while continuously stirring for 15 minutes. If there are any large chunks of yogurt, gently cut it. Simmer the flame of the stove and stir the yogurt for 20 minutes.

Step 3
This step is called draining the yogurt. Line a wide-mouthed vessel with a muslin cloth. Transfer the yogurt and whey into this muslin cloth and wait till most of the whey drains into the vessel beneath. After 10 minutes tie the cheesecloth and hang it above the kitchen sink. The whey has to be drained off completely.

Once the dripping stops cut the mass of yogurt into strips. Put one-quarter of the yogurt strips in a microwave container and heat it until the strips start to melt and become sticky. Remove the cheese from the microwave. Wear rubber gloves and knead the cheese to make it into a smooth and shiny ball. Drop this cheese ball into salted ice water.

Repeat the same process for the remaining yogurt strips. You can eat the cheese once it cools down. Refrigerate the cheese in an airtight container. It remains fresh for couple of days. Fresh mozzarella is tasty and easy to make.
