Mozzarella Cheese Recipe

Ingredients
  • Rennet tablet, 1
  • Salt, 1 teaspoon
  • Whole milk, 1 gallon
  • Citric acid, 4 teaspoon
  • Cool water free from chlorine, ½ cup
  • Thermometer
Method
  1. First, you have to dissolve the rennet in a bowl filled with water. Make sure that you mix it properly till the tablets are completely dissolved.
  2. Next, in a pot (make sure that it's not an aluminum or cast iron pot), put some milk and heat that over a medium flame.
  3. Sprinkle some of the citric acid in the milk pot and keep stirring. Now, heat the milk to at least 88ºF, when the milk starts to curdle.
  4. Then add the rennet solution and with a gap of few seconds, stir the entire solution. Keep doing this until the whole temperature goes up to 105ºF.
  5. Once this temperature is reached, you have to turn off the heat. After you do this, you will notice it coming up and separating itself from the whey that has formed now.
  6. Using a spoon, carefully take out this yogurt and put it in a bowl. Gently press them with your hands and squeeze out the remaining whey.
  7. Put the yogurt in the microwave on a high heat for at least 1 minute and then strain away the rest of the whey.
  8. Now cool the yogurt and again put them in the microwave. This you have to do twice, each for 35 seconds.
  9. Make these yogurt into a ball and keep them aside.
  10. The whey that is left now, you have to heat it over medium flame, till it reaches a temperature of 175ºF.
  11. Now knead the yogurt or the cheese and keep kneading it till it becomes smooth. While doing this, add some salt in it for taste.
  12. If your cheese has been done properly, then it will become stretchy, shiny and smooth. If not, then dip it into the hot whey, in order to make the cheese warm.
  13. Now stretch the cheese, fold it and stretch it again.
  14. Your cheese is now ready. Make small balls out of it and put it in a salt water solution (2 teaspoon salt and water).
