Easy Cheesy Omelette
Ingredients
- 2 or 3 eggs
- 2 teaspoons butter or margarine
- ¼ (20g) cup of cheddar cheese, finely grated

- 3 tablespoons of milk (optional)

Once the egg is set, sprinkle cheese, parsley and chives. Using the spatula, gently run it under the edges of the omelette. Then fold one side over the other, so the omelette is in a semi-circle. Let it cook for 30 secs, so the cheese melts into the omelette. You can now tilt the pan, so the omelette slides into the plate or lift using spatula into plate. Omelette made!
Spinach and Goat Cheese Omelette
Ingredients
- 2 large eggs
- 2 cups baby spinach
- 2 tablespoons goat cheese or feta, finely crumbled
- 1 tablespoon spring onion (scallion), finely chopped
- ¼ teaspoon hot red pepper sauce
- Salt and pepper
- 1 teaspoon oil
Cook spinach in a little boiled water for 30 secs. Drain and chop. Mix cheese and spring onion with spinach in a bowl. In another bowl, whisk eggs, hot sauce, salt and pepper. Heat the oil in a skillet. Tilt pan, so oil coats entire surface. Now add the eggs. Use spatula to push cooked portions of egg towards center. Tilt pan to let uncooked egg fill in edges. Sprinkle spinach cheese mixture over omelette, uniformly. Cook omelette for 1 minute, check if bottom is golden. Using spatula, fold half omelette over the filling. Let it cook for 30 secs, then slide onto plate.
Norwegian Baked Cheese Omelette
Ingredients
- 4 eggs
- 1 cup cooked ham, diced
- 1 red bell pepper, seeded and sliced into thin rings
- 4 spring onions, chopped
- 12 ounces cheddar cheese (Jarlsberg cheese is the preferred cheese)
- ¼ cup water
- ½ teaspoon salt
- 2 tablespoons butter
- Parsley for garnish
Preheat oven to 400° Fahrenheit. Whisk the eggs, water and salt in a bowl. Heat butter in an oven-proof pan. Sauté onions, bell pepper and ham, over medium heat, for 3 to 4 minutes. Pour the egg mixture over the onions, ham and bell pepper, then sprinkle cheese. Cook for 2 to 3 minutes, till the bottom becomes brown. Transfer pan to oven and bake for 15 to 20 minutes, till cheese melts and the omelette is set. Garnish with parsley.
Potato, Apple and Cheddar Omelette
Ingredients
- 3 large eggs
- 1 small, red potato, diced
- ⅓ apple, diced
- ⅓ cup cheddar cheese, grated
- 1 tablespoon butter
- Salt and pepper
Lightly fry the potato bits, until they are half done. Add apple pieces and fry both until the potato bits are crisp. Whisk eggs. In a heavy frying pan, heat the butter and swirl it in pan. Gently pour whisked eggs into pan. Sprinkle pepper and salt as seasoning. Scramble eggs in pan with spatula. When the eggs are semi scrambled and some are still runny, then pat them into an even layer with spatula. Cook until the omelette top is set. On one half of the omelette, put the apple-potato mixture and then sprinkle cheese. Fold one half of omelette over the other, cook for 30 secs, then transfer to plate.
