How to Cook Turkey Giblets

How to Make Stuffing with Turkey Giblets

Here is a very delicious and easy turkey giblet stuffing recipe. The use of chorizo sausage in the recipe gives it a spicy flavor.

Ingredients
  • 500 g turkey giblets
  • 250 g chorizo, casings removed
  • 2 large onions, diced
  • 2 tablespoons garlic oil
  • 2 cups breadcrumbs
  • 2 eggs
  • 2 cups chicken stock
  • 1 cup celery, chopped
  • 2 tablespoons rosemary, chopped
  • 1 tablespoon freshly ground pepper
  • 1 tablespoon sea salt
Method

In a medium-sized saucepan, heat the garlic oil. Finely slice the chorizo sausage and fry them in the oil. Now add the turkey giblets and cook them until it is browned. Once the sausages and giblets are cooked through remove them into a bowl with the help of a slotted spoon. In another pan, fry the chopped onions, and celery in 2 tablespoons of garlic infused oil. When the onions have turned translucent add ¼ cup of water into the pan. Reduce the heat and cook until the celery has been softened. Add the browned chorizo and giblets into this onions and celery mixture. Whisk the eggs in a bowl and add bread crumbs and thyme. Pour this egg mixture into the vegetable and sausage broth and simmer until you get a thick consistency. Your turkey stuffing is ready.

How to Prepare Turkey Giblet Gravy

This traditional turkey giblet gravy is a great accompaniment with mashed potatoes and turkey stuffing. Do not use turkey liver in this recipe as it gives a very strong acrid flavor to the gravy.

Ingredients
  • 250 g turkey giblets
  • ½ cup carrots, chopped
  • ½ cup onions, diced
  • 2 tablespoons vegetable oil
  • ¼ cup celery, chopped
  • 5 cups chicken stock
  • 2 tablespoons salt
  • 1 tablespoon allspice
  • ½ tablespoon salt
  • a handful of chopped parsley
Method

In a medium-sized saucepan, heat the vegetable oil. Add the chopped onions, carrots and celery and lightly fry them until they are browned. Now add the turkey giblets and stir fry them for 5 to 6 minutes. Add salt, pepper and allspice and the chicken stock. Simmer at a low heat, stirring continuously. Remove the turkey giblets from the stock and set aside to cool. Dice all the turkey giblets into small bite sized pieces. Reduce the stock and set aside one ladle of it into a bowl. Now add cornstarch into the bowl and mix well so that no lumps are formed. Add this cornstarch into the gravy along with the meat and cook until the gravy has thickened. Check seasonings and add more salt and pepper if required. Your turkey giblet gravy is ready.

Cooking Turkey Giblets in a Bag

Traditionally we cook turkey giblets in the oven, but it can also be cooked in a sealed bag. It makes the meat tender and succulent and as there is addition of onions, carrots and celery inside the bag, it enhances the flavor of the giblet. To prepare the turkey giblet in a bag you need to preheat the oven to 250º C. Put in one tablespoon of flour into the cooking bag as this prevents the bag from bursting. Add the diced carrots, celery and halved onions inside the bag. Now add the turkey giblets, salt and pepper and tie the bag with a piece of string. Make 4 to 5 slits all around the bag so that the steam can escape. Place the bag inside the oven for 45 to 60 minutes until the vegetables and giblets are cooked.
