• Mini Calzones Recipe
• Apples and Cheddar Corn Muffin Recipe

Mini Calzones

Instead of bringing pigs in a blanket to the party, why not make another mini dish! Mini calzones are a great finger food that is colorful and delicious. You need a package of uncooked biscuits, twenty slices of Pepperoni, a cup of ricotta cheese, a half cup of shredded Mozzarella, and a fourth cup of Parmesan. Mix the cheese together so that they will be spread evenly on the biscuit. Next cut each biscuit in half, making them thinner. Place each half biscuit on a cookie sheet, shaping them more like Calzones. First put a pepperoni and each biscuit and place as much cheese on top of each pepperoni, squishing the biscuits together over the top. Then bake them at 350 for about 15-20 minutes. This is a great discussion food!

Apples and Cheddar Corn Muffins

For these great muffins that combine the sweet of apples and the salt of cheese, you will need a cup and three fourths of all purpose flour, one and a half ounces of yellow cornmeal. A table spoon on baking powder, a pound of cored apples, a half cup of corn, a third of a cup of sugar, a pinch of cinnamon and nutmeg, six tablespoons of corn oil, and three eggs. Before you begin you will need to preheat your oven to 400F and line a muffin tin with muffin cups.

Next, mix your dry ingredients in a mixing bowl, and gradually add the apples, corn, cheese, sugar, cinnamon, and nutmeg. In another bowl beat the eggs and oil together and pour into the dry bowl. This is your finished batter, so pour the batter into the muffin tin. You only need to bake this for about 15 minute, or until the middles have cooked. Make sure to let them sit when you take them out of the oven and let them cool a little before serving.

Hot appetizers are an important component of any party, so show off your skills and enjoy your party!
