Method 1
Ingredients:
- Fresh ripe tomatoes (4-large)
- Red onion-chopped into ¼ inch pieces (1)
- Anaheim /New Mexico Chilies (4-green)
- Salt (1 to 2 teaspoons)
- Lime juice (1 tablespoon)
- Clove garlic-finely chopped (1)
- Olive Oil (2 teaspoons)
- Fresh oregano (1 sprig)
- Cilantro stems-removed and finely chopped (¼ cup)
First, you need to roast the tomatoes and the green chilies under the oven broiler. You can even use a gas grill. Wait until it chars or blackens. When it's done, you need to place these blackened chilies in a freezer bag with a Zip-lock and let it steam for at least 10 minutes.
Whilst, this is being done, you need to remove the skin from the tomatoes as well as the seeds. Cut it in half and chop them about ½ inch in size. Then, remove the chilies from the bag. You need to now also remove the blackened skin from the chilies. You can use a paper towel to remove the skin. Now, you can slice them lengthwise and also remove the seeds of the chilies. Next, chop the chilies and combine them with the tomatoes. Now, you need to add the lime juice, onion, garlic, salt, olive oil and cilantro to this combination. You can add the chili seeds to spice up the sauce as per the taste required. Place the fresh sprig of oregano in the salsa. Keep this in a cool area for at least an hour. Ingredients:
- Tomatoes (1-1/2 to 2 lbs)
- Fresh lime juice (2 tablespoons)
- Fresh cilantro-chopped (1-1/2 tablespoons)
- Onion-large in size (1)
- Jalapeno chilly peppers-seeded and chopped (2)
- Salt
Firstly, you need to seed and dice the tomatoes. Then, you need to place this in a medium-sized bowl. Grate the onion over the tomato. You also need to add the jalapeño peppers to this bowl. Before this, you need to peel it, seed it and chop it together. When you do this, ensure you have worn a pair of rubber gloves on your hands to prevent the burning sensation.
Next, you need to add the lime juice along with the cilantro. You can also opt to have a variation in the taste by adding some chopped cloves garlic to the mixture. Stir the entire mixture with salt to taste. Cover the preparation and place it in the refrigerator for a few hours or even overnight.
There are ways to preserve the salsa for a longer period of time. Fresh homemade salsa, which is unheated, can definitely last for a couple of weeks. If you wish to increase the storage time, you will need to boil it down. Once the salsa is prepared, you need to put it in a large pot and add some water to the salsa. Bring this preparation to a boil on the stove. Avoid covering the pot. Once the water level has reduced, you can turn off the heat. Let the entire mixture cool down and store it in the refrigerator.
