Homemade Pumpkin Pie Recipe

Ingredients
  • 2 beaten eggs
  • ½ tsp. salt
  • 1 cup shortening
  • ½ tsp. ground ginger
  • ¾ cup packed brown sugar
  • 1 can of evaporated milk
  • 2 cups of mashed, cooked pumpkin
  • ½ tsp ground cinnamon
  • 2 and 2/3 cups all-purpose flour
  • ½ cup cold water
  • ½ tsp. ground nutmeg
Process

Preheat the oven at 200ºC. Cut the pumpkin into two, remove the seeds, as well as the stringy portion. Now, cut the pumpkin in chunks. Boil the pumpkin in 1 inch water over medium heat. After a while, reduce the heat and cover the pumpkin. Cook it like this for 30 minutes. After it is cooled, peel the pumpkin and mash it using a potato masher. In a bowl, mix flour and salt for making pie crust. Add shortening to the flour, along with water, 1 tbs at a time. Mix the dough until it becomes moist to hold together. Shape the dough into a ball, with floured hands. Roll out the dough to 1/8 inch thickness, using a floured board for it. Now cut the dough 1½ inch larger than the upside down pie pan, which is of 8-9 inches. Roll the dough gently around the rolling-pin and put it on the pie pan, right side up. Unroll, and ease the dough into bottom of the pie pan. In the large bowl of the mixer, blend brown sugar, ginger, nutmeg, cinnamon, pumpkin, evaporated milk and salt. Pour the mixture into the prepared crust and bake for 40 minutes. After these 40 minutes, your fresh and delicious pumpkin pie recipe will be ready to serve.

Ingredients
  • ½ tsp. ground cinnamon
  • 1 cup heavy cream, cold
  • 1 pastry crust
  • 1¼ cups fresh pumpkin puree
  • ¾ cup milk
  • ½ tsp. ground ginger
  • ½ cup sugar
  • 2 tbsp. melted butter, unsalted
  • Salt to taste
  • 1 tbsp. dark molasses
  • 1/8 tsp. ground cloves
  • 2 large eggs

For Pumpkin Puree
To learn how to make homemade pumpkin pie from scratch, we first need to learn how to prepare a pumpkin puree. Without this, we won't be able to go ahead with the procedure. Cut the pumpkin, and remove the stringy portion, along with the seeds. Cut a greased baking sheet, and place it on a platform. On this sheet, place the cut pumpkin. Bake this for 1 hr., at 169ºC. Now, peel the pumpkin and blend it in a mixer, until smooth. Strain the mixture in a coarse sieve. Your pumpkin puree is now ready.

Preheat the oven to 175ºC. Heat milk over medium heat until bubbles form around the edges. In a bowl, beat the eggs and add scalded milk. Mix well. Add sugar, pumpkin, molasses, butter, salt, cinnamon and ginger, blend thoroughly. Pour the mixture into the prepared crust and bake for a duration of 45 minutes. Beat chilled cream until soft peaks form, serve the pie with this cream on top.

Old-Fashioned Pumpkin Pie Recipe

Ingredients
  • 1½ cup heavy cream or one 12 oz. can of evaporated milk
  • ½ teaspoon salt
  • 2 eggs plus the yolk of a third egg
  • ½ tsp. of lemon zest
  • 2 tsp. of cinnamon
  • ½ cup packed dark brown sugar
  • ¼ tsp. ground cloves
  • ⅓ cup white sugar
  • ¼ tsp. ground nutmeg
  • 2 cups of pumpkin pulp purée from a sugar pumpkin
  • 1 tsp. ground ginger
Process

Make pumpkin puree, following the procedure mentioned above. Preheat the oven to 220ºC. Mix lemon zest, spices, sugar and salt in a bowl. Add eggs and beat the mixture along with the pumpkin puree. Pour the mixture into the prepared crust and bake for about 15 minutes. After 15 minutes, reduce the temperature to 175ºC and bake for another 40-50 minutes. Cool on a wire rack and serve with whipped cream. Your pie is ready to be eaten :)
