Although we don't make the mistake of eating just one meatball and try to hog down as many as we can. I am really happy that some person cooked up the combination of spaghetti and meatballs. Meatballs and Sauce

Ingredients
  • 48 oz tomato paste
  • 12 cups water
  • 5 pork chops
  • 4 garlic, chopped
  • 2 eggs
  • 2 bay leaves
  • 2 tablespoons parsley, dried
  • 1¼ cups bread crumbs, dried
  • 1 lb ground beef
  • ¼ lb ground veal
  • 1 tablespoon basil leaves, dried
  • 1 cup Romano cheese, grated
  • 1 onion, chopped
  • 1 pack mushrooms, sliced
  • ¼ lb ground pork
  • Olive oil
  • Salt and pepper for taste
Procedure

Take a big pot to mix tomato paste, 2 cloves of garlic, bay leaves, water, basil, and salt in it. Boil the mixture for few minutes and then keep it on low to simmer. Take a skillet and brown the 5 pork chops in some olive oil. Once the pork chops are cooked evenly, place them in with the mixture in the pot. The same skillet will be used to sauté the onions and mushrooms. Don't clean or wipe the leftover pork fats from the skillet. This will give flavor to the onions and mushrooms. As the mushrooms start to shed some water and onions turn translucent, add them to the pot as well. Now simmer the sauce for at least 7 - 8 hours. Keep stirring the sauce from time to time.

Before we start preparing the meatballs, preheat the oven at 350ºF. Take a baking pan and grease it with butter. In a mixing bowl, combine beef, pork, veal, beaten egg, Romano cheese, salt, pepper, soy sauce, bread crumbs, garlic, and parsley. Mix everything completely and make small, round balls. Keep the meatballs on the greased baking pan and then in the oven for about 20 - 25 minutes. Once the meatballs are cooked and the sauce is ready, add the meatballs into the sauce and let it sit for about 2 hours. Cook spaghetti few minutes before dinner and add the meatballs and sauce in at the dinner table.

BBQ Glazed Meatballs

Ingredients
  • 6½ oz evaporated milk
  • 1½ lbs ground beef
  • 1 egg, lightly beaten
  • 1 cup quick cooking oats
  • 1 cup brown sugar
  • 1 cup ketchup
  • 1 tablespoon chili powder
  • 1 tablespoon liquid smoke flavoring
  • ½ teaspoon garlic powder
  • ½ cup chopped onion
  • ¼ teaspoon minced garlic
  • ¼ cup onion, chopped
  • Salt and pepper for taste
Procedure

Before we start preparing the meatballs, preheat the oven at 350ºF. Take a baking pan and grease it with butter. In a mixing bowl, combine beef, beaten egg, milk, salt, pepper, oats, garlic and chili powder, and ½ cup chopped onions. Mix everything completely and make small, round balls. Keep the meatballs on the greased baking pan. A separate mixing bowl will be needed to combine the rest of the ingredients: ketchup, brown sugar, ½ cup onion, garlic, and liquid smoke. Mix everything and pour it over the meatballs to coat evenly. Place the baking pan in the oven for about an hour without covering the meatballs. Mix the meatballs with your choice of sauce or you can also follow the recipe mentioned above. Combine with freshly cooked spaghetti and mix properly before serving.

Cranberry Meatballs for Appetizers

Ingredients
  • 12 oz chili sauce
  • 2 tablespoons soy sauce
  • 2 lbs ground beef
  • 2 eggs
  • 2 teaspoons lemon juice
  • ¼ cup fresh parsley, chopped
  • 1 cup cornflake crumbs
  • 1 tablespoon brown sugar
  • ⅓ cup ketchup
  • ¼ cup minced onions
  • ¼ teaspoon garlic powder
  • ¼ teaspoon pepper
  • Whole cranberry sauce
Procedure

Before we start preparing the meatballs, preheat the oven at 300ºF. Take a baking pan and grease it with butter. In a mixing bowl, combine beef, cornflake crumbs, beaten egg, parsley, salt, pepper, soy sauce, ketchup, garlic powder, and onions. Mix everything completely and make small, round balls. Keep the meatballs on the greased baking pan. For the sauce, whisk in chili and cranberry sauce, lemon juice, and brown sugar in a medium-sized pan. Keep stirring the mix continuously till it gets thick. Pour the sauce over the meatballs and then slide the pan in the oven for 40 - 45 minutes. Serve them hot; right before you're about to have your dinner.
