Homemade Fluffy Pecan Pancakes Recipe

Homemade fluffy pecan pancakes are very delicious and they can be served for breakfast, lunch, dinner or just as a snack. I love eating and cooking homemade pancakes and I am always looking for some new ideas on how to make them in a different way. My family is always surprised by the new taste and look of my homemade pancakes.
This time I decided to prepare these fluffy pecan pancakes and again I have to say that the result was amazing and everybody liked the pancakes. To make these pancakes you will need only few basic ingredients, which you can buy in your grocery store, or maybe you just have them in your kitchen. To make the batter it is good to use two separate bowls. One I use to mix wet ingredients and the other one is for dry ingredients. To top the pancakes you can use maple syrup or any other you like. Here is the recipe for these fluffy pecan pancakes:
Ingredients:
- 1/4 cup melted butter
- 2 large eggs, separated
- 2 cups flour
- 2 tablespoons brown sugar
- 1 teaspoon baking powder
- 3/4 cup milk
- 1 cup buttermilk
- pecan halves or fruit for garnish, optional
- 3/4 cup finely chopped pecans, toasted if desired
- vegetable oil
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- In one bowl, mix flour, salt, baking powder, baking soda and chopped pecans.
- In a separate bowl, mix milk, buttermilk, melted butter and egg yolks.
- Pour wet ingredients into the dry ingredients and mix until combined. Do not over mix the batter it can have some lumps remaining. The will disappear during the cooking.
- Beat egg whites in a separate bowl until stiff peaks form.
- Then fold egg whites to the batter and gently mix. Again do not over mix.
- Heat a frying pan over medium high heat and brush it with few drops of oil or butter.
- Pour about ¼ cup of the batter on the surface of the frying pan.
- Cook pancakes on one side for about 2-3 minutes or until golden brown.
- Then flip and cook again for about 1-2 minutes or until golden brown.
- Serve warm and topped with butter and garnished with pecans or with some fruits.
