Homemade Cookies

Who doesn't love cookies? Can't think of one person who would say that he doesn't! I feel, cookies are a healthy snack option and the preparation does not take much of your time as well. And while deciding on the menu for a party, you can't miss out the cookies for sure! You get the ready-made ones in market easily, however, the ones made at home have a taste of their own which cannot be overlooked and therefore I suggest, you try out the recipes given below.

Chocolate Chip Cookies
Ingredients
  • 12 tablespoons butter
  • 1 cup demerara sugar
  • ½ cup white sugar, granulated
  • 2 eggs, beaten
  • 2¼ cups flour
  • ½ teaspoon salt
  • 1 teaspoon baking soda
  • 1½ teaspoon vanilla extract
  • 1 cup nuts, chopped
  • ½ cup golden raisins, soaked in water
  • 1 cup semi-sweet morsels or chocolate chips
Method
In a large bowl, take butter and the sugars and mix them thoroughly. To this mixture, add eggs, flour, salt, vanilla extract and then beat the mixture again so that a thicker consistency batter is formed. Add the nuts, morsels or chocolate chips and raisins and mix them well so that they are evenly distributed. Take a cookie baking sheet and grease it with oil or butter. Add loopful of batter into each of the cookie holder and bake them for around 12 minutes at 320ºF so that the cookies appear slight brownish and firm.

Frosted Pumpkin Cookies
Ingredients
  • 4 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 teaspoons cinnamon, grounded
  • ½ teaspoons ginger, grounded
  • ¼ teaspoons cloves, grounded
  • 2 cups sugar
  • 2 eggs
  • 1 can pumpkin
  • 3 teaspoons vanilla extract
  • 1 cup raisins
  • 2 cups powdered sugar
  • 2 cups cream cheese
  • ¼ butter, softened
Method
Take a large bowl into which add flour, baking soda, baking powder, salt, cinnamon, ginger, cloves and sugar and mix all of them together. Add the pumpkin puree along with the eggs and 2 tablespoons of vanilla extract and beat the mixture with the help of a blender. Add flour simultaneously and keep on blending until a batter is formed. Lastly, add the raisins and mix well. Now, prepare the cookie baking dish by greasing it with butter. Pour the batter into each cookie cup and bake them at 350 degree F for around 15 minutes. Meanwhile, you need to prepare the frosting. In a bowl, add cream cheese, butter, 1 tablespoon vanilla extract and powdered sugar and blend the mixture so that a fluffy frost is formed. After the cookies are done, top each one with the frosting and decorate with nuts. Your cookies are ready to eat!

Italian Cookies
Ingredients
  • ½ cup almond paste
  • 1 cup white sugar
  • 2 egg whites
  • ¼ cups pine nuts
Method
A popular recipe, the procedure goes like this. For making the almond paste, soak them overnight in hot water and make a paste using a mixer or blender. In a bowl, mix the paste and the sugar. To this mixture, add egg whites and beat the resultant mixture with the help of a blender. Prepare the cookie baking sheet and add the batter into each holder followed by placing nuts on the top. Bake the cookies for 12 minutes at 325 degree F. Cool and serve.
