False Hare (German Meatloaf)
Ingredients for Meatloaf
- Lean ground pork, ½ pound
- Lean ground beef, ½ pound
- Large eggs, 2
- Peeled hard boiled eggs, 2
- Bacon strips, 4
- Chopped medium onion, 1
- Chopped parsley, 2 tbsps
- Mustard, 1 tsp
- Paprika, 1 tsp
- Salt as per taste
- Bread crumbs, 3 tbsps
- Cold water, 3 tbsps
- Vegetable oil, 4 tbsps
- Beef broth, 1 cup
- Sour cream, ½ cup
- Cornstarch, 1 tsp
- Hot water, ¼ cup
- Water, ¼ cup
In a large bowl, mix lean ground meat, eggs, bread crumbs, cold water and season with parsley, mustard, paprika and salt, blend it thoroughly. Flatten out the meat mixture in a square shape. Place whole hard boiled eggs in the middle, in a row and fold the sides to cover the eggs. Shape the meat, into a flat bread loaf. Meanwhile, cook 2 bacon strips in the oven until cooked. Heat oil on a flat oven dish and place the meatloaf on it. Bake the loaf in a Dutch oven, until browned from all sides. Uncover the oven and arrange the remaining 2 bacon strips on top of the meatloaf and gradually pour beef broth over it. When cooked, place it on platter and keep it warm.
Sauce Preparation
Boil ¼ cup of hot water and add cornstarch which has been dissolved in ¼ water. Cook until thick, stir continuously to ensure no lumps are formed. Remove from heat and add the sour cream. Season with salt and paprika. Serve the meatloaf with the sauce as an accompaniment.
Bacon Mushroom Swiss Meatloaf
Ingredients
- Lean ground beef, 1.5 pound
- Diced bacon, 12 ounces
- Egg, 1
- Chopped medium white mushrooms, 4
- Chopped small onion, 1
- Shredded Swiss cheese, 6 ounces
- Evaporated milk, ¼ cup
- Corn flake crumbs, ½ cup
In a skillet, cook bacon until cooked and browned; place it on a paper towel to drain excess fat. Saute mushrooms and onion in the same skillet, in the leftover bacon fat. Preheat the oven to 350 degrees F. Keep aside a tablespoon of Swiss cheese and bacon for the dressing. In a bowl, mix beef, bacon, egg, Swiss cheese, milk, cornflake crumbs and the mushroom-onion mixture. Shape the mixture into a loaf and bake until done. Sprinkle the reserved bacon and cheese and bake again, until cheese is bubbly. Cool it down for 10 minutes before slicing. Serve with any desired sauce
Garden Meatloaf
Ingredients
- Ground beef, 2 pounds
- Eggs, 2
- Diced green pepper, 1
- Large diced onion, 1
- Grated carrots, 2
- Finely diced broccoli, 4 florets
- Mushroom, 1 medium can
- Oatmeal, 1 cup
- Tomato sauce, 1 small can
- Brown gravy mix, 3 small packets
In a large bowl mix all ingredients, except brown gravy mix. Shape into a loaf and pour the brown gravy over it. Bake until cooked. Serve hot.
Mashed Potato Filling for Meatloaf
Ingredients
- Yukon gold potatoes, peeled and cut into quarters, 4 pounds
- Full cream, 2 cups
- Butter, 3 tbsps
- Chopped chives, 2 tbsps
- Salt and pepper as per taste.
In a large pot, boil the potatoes with salt and pepper until cooked. Mash the potatoes well, making sure no pieces are left. Heat butter and cream in small pan. Add it to the potatoes and season with salt, pepper and chives. This potato filling can be added to any meatloaf recipe.
