Chicken and Spinach Quesadillas
This is a Mexican delight and kids love to eat Mexican food. Also, instead of spinach you can add any other vegetables and instead of chicken you can use turkey. Any permutation and combination will help you complete the nutrition. This can be a good dish and kids will love it for sure.
Ingredients
- 10 oz frozen spinach
- 1/2 cup prepared pesto sauce
- 1 cup diced cooked chicken
- 1 cup shredded cheese
Place the 4 tortillas on a board and spread the pesto sauce on the tortillas. Squeeze all the water from spinach and place it on the tortilla. Add cheese and chicken and place the remaining tortilla and press them together firmly. Heat the skillet and cook each quesadillas. Cook tortillas until they turn golden brown and the cheese melts.
Rice and Bean Burritos
Veggies and meat can add to the nutritious value and as usual burritos are liked by every child.
Ingredients
- 1 small chopped onion
- 1 tablespoon olive oil
- 1 cup canned black beans (mashed)
- 1 cup cooked rice
- cooking spray
- 2 tablespoons salsa sauce
- 1 link of cooked turkey (diced or optional)
- 4 sun dried tomato wraps
- sour cream
Initially apply cooking spray to a baking dish and preheat the oven at 300 degrees Fahrenheit. Take some olive oil in a skillet and cook some onion until the onion becomes soft. Add beans, seasoning, rice, salsa and sausages and heat this mixture. ¾ cup of this mixture is then placed at the middle of the wrap and is topped with cheese. Place these burritos in the oil coated baking dish. Place this dish in oven and wrap it with foil and bake the burritos for 15 minutes. Serve the burritos with salsa and sour cream.
