Ingredients
  • 1 onion
  • 1 potato
  • 1 cup cut carrot
  • 1 cup bell peppers
  • 1 cup zucchini
  • 8 to 10 chicken pieces
  • 1 tbsp fresh chopped rosemary
  • Oil for brushing
  • Salt and pepper to taste
Method
  • Preheat the oven to 400 degrees Fahrenheit.
  • Cut the vegetables into large chunks.
  • Brush the chicken pieces (preferably chicken breast) with brushing oil and place it in the roasting pan.
  • Add all the vegetables, salt, pepper and rosemary and toss all the ingredients well.
  • If you think that all the ingredients are very dry, you can add up to ½ cup of water to it.
  • Place the pan in the oven and let it bake for about an hour.
  • When ready serve with rice.
Sesame Spaghetti
There are times when we are very hungry and would want to eat something filling. At such times also you can make use of this easy healthy recipe. Now what makes the spaghetti healthy? It is the choice of spaghetti used and the sesame seeds. Wheat noodles are used in this quick and easy dinner recipe.

Ingredients
  • 1 pound whole wheat spaghetti
  • ½ cup soy sauce
  • 1 tbsp sesame oil
  • ½ cup toasted sesame seeds
  • 1 tbsp canola oil
  • 2 tbsp lime juice
  • 1½ tsp freshly crushed red pepper
  • 1 bunch sliced scallions
  • ¼ cup chopped fresh cilantro
  • 4 cups trimmed and sliced snow peas
  • 1 thinly sliced red bell pepper
Method
  • Bring a large pot of water to a rolling boil.
  • Add spaghetti to the water and cook it according to the directions on the package.
  • When spaghetti is cooked, drain the water and run cold water over it.
  • In a large mixing bowl whisk soy sauce, sesame and canola oil, ¼ cup of scallions, 2 to 3 tbsp of cilantro, red pepper and lime juice together.
  • Add snow peas and bell pepper to the mixture and toss well.
  • Now add spaghetti and toss well, so that the noodles are well coated.
  • Before serving add sesame seeds, scallions and cilantro to garnish.
