Almond and Honey Butter Cookies
Ingredients:
- All-purpose flour, 2 cups
- Almonds, chopped, ½ cup
- Honey, ½ cup
- Almond extract, 1 teaspoon
- Vanilla extract, 1½ teaspoons
- Baking soda, ½ teaspoon
- Egg, large, 1
- Sugar, ¼ cup
- Stick butter or margarine, softened, ¼ cup
- Vegetable oil, 2 tablespoons
- A pinch of salt
- Cooking spray
Measure the required amount of flour in a large mixing bowl. Now mix baking soda and salt together with the flour. In a smaller bowl, separate the egg white, and along with it add honey, softened butter (or margarine, according to your preference), sugar and vegetable oil and blend them till they combine. Pour this mixture into the larger bowl containing flour and with a flat spoon or spatula whisk the ingredients together till it forms a sticky dough. Coat your hands with cooking spray, so that the dough doesn't stick to your fingers. Now roll the dough into equal portions and wrap them with butter paper. Place these rolls in a refrigerator for about 3 hours till they become firm. Cut the rolls and place them in a greased baking tray. Bake these cookies in a preheated oven at about 375 ºF for about 10 minutes. Remove the tray from the oven and place the cookies on a wire rack to cool them.
Oatmeal Chocolate Chip Cookies
Ingredients:
- All-purpose flour, 2 cups
- Quick cooking oatmeal, 3 cups
- Semi sweet chocolate chips, 2 cups
- Unsalted butter, softened, 1½ cups
- Pure vanilla extract, 2 teaspoons
- Golden brown sugar, lightly packed, 1 cup
- Nutmeg, ¼ teaspoon
- Eggs, large, 2
- Baking powder, 1 teaspoon
- Granulated sugar, 1 cup
- Kosher salt, 1 teaspoon
- Toasted walnuts, 1½ cups
- Ground cinnamon, 1 teaspoon
Before making this oatmeal chocolate chip cookie, preheat the oven to about 350 ºF. Now take a large bowl and sift the all-purpose flour with the baking powder, nutmeg, cinnamon and salt. In a separate bowl, break the eggs and add butter, brown sugar, vanilla extract, granulated sugar and beat them together with the help of a blender. Transfer the contents to the large bowl, and mix together with oatmeal, chocolate chips and toasted walnuts, till they combine. With the help of a spoon, scoop the dough and drop it on the cookie tray lined with parchment paper. Flatten the top with your hand or a spatula. Bake it in the oven for about 10 to 15 minutes, till they turn light brown. Enjoy these cookies with a cup of milk, relaxing on a hammock.
Peanut Butter Chocolate Chip Cookies
Ingredients:
- All-purpose flour, 1½ cups
- Crunchy peanut butter, 1 cup
- Semi sweet chocolate chips, 1 cup
- Unsalted butter, softened, ½ cup
- Baking soda, 1 teaspoon
- White sugar, ½ cup
- Baking powder, ½ teaspoon
- Orange juice, 3½ tablespoons
- Brown sugar, lightly packed, ½ cup
- Salt, ¼ teaspoon
- Vanilla extract, 1 teaspoon
- Eggs, large, 2
Whisk the peanut butter, softened butter, brown sugar and white sugar, along with the eggs, vanilla and orange juice, till they combine thoroughly and form a creamy mixture. Stir in the all-purpose flour, baking powder, salt and baking soda and mix properly to avoid the formation of lumps. Transfer the chocolate chips and continue stirring. Now with an ice cream scoop, drop the dough on the greased cookie tray. You can also use cookie cutters to shape the cookies. Bake the cookies in a preheated oven at about 345 ºF for 15 minutes till the cookies turn brown at the edges. Remove them from the oven and let them cool down. Your healthy chocolate chip cookies are ready to be relished.
