Through years of research it has been confirmed that artichokes are a great source of many vitamins and minerals that the body uses every day and are good for those trying to lose weight. Artichokes are fortified with silymarin, cynarin, folic acid, thiamin as well as vitamins A and C.
Cynarin is an amino acid that has been shown to help reduce bad cholesterol, the amino acid silymarin can help prevent all types of cancer and folic acid has been proven to protect against heart disease.
Most people are not sure exactly what parts of the artichoke are to be eaten or how to prepare them. Below is a simple and quick artichoke dip that will make you forget that it’s actually good for you.
You will need:
4 Large artichokes
½ c. non-fat sour cream
½ c. chopped green onion
Juice from ½ lemon
1 tsp. garlic salt
2 tsp. parmesan cheese (grated)
Preparation
Cut off the bottom of the stem and the top of the artichoke and discard. Rub with lemon juice and then steam the artichokes until fully cooked. Peel off the leaves and set aside, mash the stems and the hearts until smooth.
Preheat the oven to 350 degrees F. In a mixing bowl, combine sour cream, onion, lemon juice, garlic salt and artichoke mash.
Place mixture in casserole dish, top with parmesan cheese and bake for 25 minutes.
This healthy artichoke treat can be served warm or cold with a dipping choice of chips or the cooked artichoke leaves set aside earlier. So instead of taking diet pills or herbal remedies the nutrients the body needs can be acquired through a delicious snack.
