Grilling Rule #1: Manage the Heat

If your barbecue uses charcoal then always wait for the flames to disappear and leave the glowing embers behind. Embers have more heat and will cook your food more evenly. Your gas barbecue needs to be turned on early so that the grill plates are well-heated through before any food is put on them. If you try grilling food when the heat is too intense it will be burned on the outside, but raw inside. A more moderate heat will cook the food more slowly without burning.

Grilling Rule #2: Flip Once

During the grilling process try to only flip the meat one time. Why you want to do this is because juices get lost each time the meat is turned. A tip to cook rare beef is to turn just as the meat juices start appearing on top of the meat. The same rule applies to fish. Flip just once and when it is opaque and flakes when touched with a fork, it’s done.

Grilling Rule #3: Don’t Forget the Veggies

Vegetables also work well on the barbecue. Slice them, season them and put them directly onto an oiled grill plate to cook. Sweet corn is a vegetable that works exceptionally well.

It is safe to say no matter how good you are at a grilling, if the meat you cook with is not good quality to begin with then the end result is not likely to be any better. Try and choose pieces of meat that have not littlemuch visible fat. While Ffat is important for both flavor and moistness, but isn't exactly great for your health or waistline.

Grilling fish is a quick and easy process on the barbecue. When it comes time to test if the fish is cooked use a fork to flake it and the flesh should be opaque and not transparent.
