Green Tomato Salsa

Green tomato salsa can spice up any food, be it a humble roast chicken or juicy dumplings. It is surprisingly easy to prepare and you need just a handful of ingredients to make it.
Everybody loves the taste of a tangy, sweet and juicy tomato. Tomatoes are an often used ingredient in all types of cooking. Tomatoes are used in salads, sandwiches and stews. But the best way to taste the unique flavor of tomatoes is to make fresh green tomato salsa. Green tomatoes are unripe tomatoes and they have a rather zesty tang. Green tomatoes can be had in a number of ways. You can make green tomato salsa, fried green tomatoes, green tomato pickles and you can even have canned green tomatoes.

Green Tomato Salsa Recipe

This tangy and delicious salsa verde can be served as a condiment with tacos, burritos or grilled and roasted meat.

Ingredients
  • 4 green tomatoes
  • 2 red onions, chopped fine
  • 2 small red bell peppers
  • 4 garlic cloves, minced
  • juice of 1 lime
  • 1 red Thai chili
  • ½ cup coriander, chopped
  • 2 jalapenos, chopped
  • 2 tablespoons gherkins, chopped
  • 1 teaspoon sugar
  • ½ tablespoon salt
Method

Chop the green tomatoes into very small pieces and keep it aside in a medium-sized bowl. Now cut the red bell peppers in half, and lightly sprinkle it with coarse sea salt. Grill this in an oven for 15 minutes and remove once they are done. Let the bell peppers cool and then carefully discard the skin of the bell pepper. Chop the grilled red pepper and add it into the bowl containing the diced tomatoes. Now add the jalapenos, gherkins, diced red onions and minced garlic. Combine all the ingredients together in the bowl. Take the red Thai chili and slit it lengthwise. Deseed the chili and slice it into fine pieces. Add the chopped chili along with lime juice, chopped coriander, sugar and salt into the bowl. Combine everything together until its thoroughly mixed. Cover this salsa with a cling film and refrigerate for 1 hour. Serve it with tortilla chips or honey glazed spare ribs.

Green Tomato Salsa Canning Recipe

If you have plenty of green tomatoes, canning them is a very good idea. You can jazz up a simple stew or spaghetti with this salsa.

Ingredients
  • 10 cups green tomatoes, chopped
  • 4 large red onions
  • 4 green bell peppers
  • 5 jalapeno peppers
  • 8 garlic cloves, minced
  • 1 cup fresh coriander, chopped
  • 2 red bell peppers
  • 1 ½ tablespoons Cayenne pepper
  • 2 tablespoons extra virgin olive oil
  • juice of 2 lemons
  • 1 cup vinegar
  • ⅓ cup sea salt
  • ½ tablespoon freshly ground black pepper
Methods

Chop the tomatoes, red and green bell peppers and onions and put them into a medium-sized bowl. In a small pan, heat the extra virgin olive oil and add onions and tomatoes, cook them on medium heat. Now add the diced red and green bell peppers into the pan. When the green tomatoes and bell peppers turn tender, add the diced jalapeno peppers, minced garlic, vinegar, lemon juice and chopped coriander. Season the salsa with freshly ground black pepper, cayenne pepper and sea salt. Simmer this mixture for 15 to 20 minutes, stirring continuously. Remove this mixture from the burner and let it cool.

In a medium-sized pot, bring some water to boil. Take clean glass jars and immerse it in water for 15 minutes. Remove from water and let it dry completely. When the jar is completely dry, pour the green tomato salsa into it and refrigerate. You can also use a water bath canner or a pressure canner for canning tomatoes. It is necessary to sterilize the jars as the salsa is preserved for a longer time.

Salsa Verde

Salsa Verde is a Mexican dish which is made with green tomatoes, minced garlic and parsley. To get the best results chop all the ingredients as finely as possible.

Ingredients
  • 8 to 10 big green tomatoes
  • 3 jalapeno peppers
  • 1 medium-sized white onion
  • 2 red chillies
  • ½ cup parsley, chopped
  • 2 cloves garlic
  • 4 tablespoons lime juice
  • 1 tablespoon salt
Method

Cut the tomatoes into half and place them in a baking sheet drizzled with olive oil and salt. Grill them for 10 to 15 minutes until they are lightly charred. Remove them from the oven, and discard the seeds and skin of the tomatoes. In a blender, add the tomatoes, jalapeno peppers, diced white onion, garlic, red chillies and parsley. Blend all these ingredients to a coarse puree. Pour the puree out into a bowl and add salt and lime juice. Mix everything well and let this mixture stand for ½ an hour as this enhances the flavors of the salsa verde and makes it more tasty.

Fresh green tomato salsa makes a great accompaniment with a juicy piece of steak or roasted chicken. The tart citrus taste of green tomatoes, pairs well with any kind of grilled or barbecued meat. The beauty of salsa verde is that you can tweak the recipes to suit your palate. You can add more or less of any ingredients, like garlic, jalapeno or red chilies according to your taste.
