Gluten Free Desert

If you are on a gluten free diet, never fear! Those favorite deserts you crave can be your for the taking (with only a little tweaking).
One of the side effects of living in a developed nation is that there is an increase in allergies, not only to the surrounding environment, but also in the food that we consume. With a cleaner environment, and clean packaged food, our bodies are not always able to defend itself against common allergens.

In food there are eight major allergen groups. These includes milk (lactose intolerant), eggs, fish, shellfish, peanuts, soybeans, nuts, and wheat. Of all of these allergies the hardest to avoid in modern foods is wheat. Wheat is in almost everything that you buy at the store that is processed. This means no cereals, kamut, spelt, barley, or rye. Many allergy experts are still debating whether or not oats are safe from those allergic to the gluten in wheat.

If you find yourself suddenly allergic to wheat, it can be hard to cut out those things, especially sweets that you are no longer able to eat. Since this is the case, here is one recipe to lift your frown and fill your belly.

Gluten Free Macadamia Pie Crust Recipe

You might not think that making a pie can be possible without, say, flour, but that is not the case. You can make a delicious pie crust without that common ingredient. You will need six ounces of macadamia nuts, two eggs, and a cup and a half of soy flour (that’s right they make soy flour, so you are saved).

Make sure to preheat your oven to about 350F before you begin. Put your nuts into a food processor and blend. You should stop when the nuts have the consistency of peanut butter. Beat in the eggs and flour until everything is mixed fully.

Next take wax paper and surround the dough on top and bottom. Roll the dough with in the wax paper into a large foot diameter circle. Take on of the pieces of wax paper off, and put face down into a pie pan. You will only need to cook this for about five minutes.

This is a great pie starter recipe, to which you can add any filling that you want (or are not allergic to). Enjoy!
