Applesauce Bread
Ingredients
  • ⅓ cups sorghum flour
  • ⅓ cup whole bean flour
  • ⅓ cup cornstarch
  • ½ cup sugar
  • 2 teaspoons xanthan gum (food thickening agent)
  • 1 teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ teaspoon cinnamon
  • 1 cup golden raisins
  • ½ cup applesauce
  • 1 teaspoon cider vinegar
  • 2 egg whites
Procedure
In a large bowl, mix cornstarch, sugar, xanthan gum, baking powder and soda, salt, cinnamon and raisins along with all the flours. Create a well in the middle after thoroughly mixing. In another bowl, take applesauce, vinegar and egg whites and blend the mixture evenly. Now, pour this mixture into the well and combine properly. Meanwhile, grease a loaf pan with oil, pour the bread mixture and bake it for about an hour at 360 degree F. Cool for about half an hour before cutting the bread. The bread appears slight brown and fluffy. It can be best served with jam!

Pumpkin Bread
Ingredients
  • ½ cups bean flour
  • 3 teaspoons xanthan gum
  • 2 cups pureed canned pumpkin
  • 1 cup liquid honey
  • 1 cup oil
  • ½ cup water
  • 4 eggs
  • 2 teaspoons baking soda
  • 1 teaspoon nutmeg
  • 1 teaspoon cinnamon
  • ½ teaspoons salt
  • ½ cups rice flour
Procedure
In a large bowl, add all the flours, salt, cinnamon, nutmeg, baking soda and xanthan gum. Combine these properly. Take another bowl into which add pumpkin puree, honey, corn oil, eggs and water and stir them together as well. You would need to blend the mixture so that the ingredients mix properly. Meanwhile, preheat the oven to 325 degree F and prepare the loaf pan by sprinkling little amounts of flour onto the base. As before, make a well in the dry mixture bowl and then pour in the pumpkin mixture into it. Mix it well and pour in the loaf pan. Bake for about an hour, let is cool and remove it from the loaf pan. You can eat it with cooked vegetables.

Milk Bread
Ingredients
  • 1 egg
  • ¼ cup milk
  • 1 tablespoon oil
  • 1 tablespoon sugar
  • 2 cups rice flour
  • 2 teaspoons xanthan gum
  • 2 teaspoons instant dry yeast
  • ¾ teaspoon salt
Procedure
Take a bowl and add flour, salt, xanthan gum, yeast and sugar and mix well. In another bowl, take egg, oil and milk and whisk the mixture well. Now, what you need to do is pour the mixtures in the bread maker and set the bread maker to the required values, here 350 degree F and 1 lb pressure. After the bread is ready, cool is for sometime and remove it from the bread maker. Cut the loaf and use it. These taste best when used for sandwiches and toasts.

Rice Soya Bread
Ingredients
  • 2 eggs
  • ½ cup water
  • ¼ cup butter
  • 1 teaspoon vinegar
  • ½ tablespoons sugar
  • 4 tablespoons powdered milk
  • ¼ cup brown rice flour
  • ¼ cup rice flour
  • ½ cup potato flour
  • 1 cup soy flour
  • 1 tablespoon xanthan gum
  • ½ tablespoons active dry yeast
Procedure
Initially, take a bowl into which add all the flours and the xanthan gum. Keep adding the butter, vinegar, sugar, salt, yeast, powdered milk and mix thoroughly. Take another bowl and mix eggs and water in it. Pour both the mixtures in the bread maker and set the maker to the required temperature as before. When the dough is all set and fluffy, remove it from the bread maker and let it cool for some time. Have it the way to wish to.
