Pancakes are popular on the breakfast menu all over the world. Pancakes are an inseparable item of American breakfast. However you might find it a bit boring if your pancakes taste the same everyday. Though the name 'German' pancake, pancake is only mildly popular in Germany. German pancake is similar to Yorkshire pudding and is a common breakfast item. It is made with eggs, flour and milk with a seasoning of vanilla and cinnamon. Sugar is also used according to the taste preferences. Unlike American pancake, which is puffy, German pancake is flat. It is baked in a skillet and flattens as soon as removed from the oven. It is generally served with freshly squeezed lemon juice, butter, powdered sugar or fruit toppings. Pancake with maple syrup is not very common in Germany.

German Pancakes
This is an old and very simple recipe for making classic German pancakes.

Ingredients
  • 6 eggs
  • 1 cup milk
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • Butter
Preparation
  1. For making batter, mix the milk, flour and sugar together. Beat the mixture well until it is smooth.
  2. Melt a small amount of butter in a large non-stick metal pan (skillet)
  3. Pour enough pancake batter into the skillet so as to cover the whole pan in a thin layer.
  4. Start flipping as soon as the edges start drying. (Use a large spatula for this process). It does not take much time on the second side. Continue baking the rest of the pancakes in the similar way.
Applesauce, cinnamon sugar or syrup can be added as toppings. While serving, the pancakes can be folded in half with the topping on the inside. To add to the taste, sprinkle some cinnamon sugar over top.

German Apple Pancakes

Ingredients
  • 4 eggs
  • 1/2 cup all-purpose flour
  • 1 tbsp sugar
  • 1/2 tbsp salt
  • 2/3 cup milk
  • 2 tbsp butter
  • 2 apples, peeled, cored, and thinly sliced
  • 2 tbsp sugar
  • 3/4 tbsp cinnamon
Preparation
  1. Preheat oven at 400 degrees.
  2. Use electric blender to beat eggs until thick and lemon-colored.
  3. Add flour,1 tablespoon sugar, salt, milk and beat again.
  4. Add 1 tablespoon butter in pan and preheat two 9 inch pie pans in a hot oven.
  5. In the pan pour the batter and arrange apple slices on top of it.
  6. Sprinkle a mixture of 2 tablespoons sugar and 3/4 teaspoons cinnamon.
  7. Let it bake for 15 to 20 minutes.
When ready, serve with warm maple syrup or sprinkle with powdered sugar.

German Potato Pancakes

Ingredients
  • 3 lbs potatoes
  • 1 onion (medium size)
  • 1 tbsp all-purpose flour
  • 1 egg
  • Salt and pepper (to taste)
  • OilPreparation
    1. Grate potatoes and onion into fine pieces.
    2. Mix well all the ingredients to form the batter for pancakes.
    3. Pour some oil in the pan and heat.
    4. Use a tablespoon or a scoop and place small portions of batter on the pan and flatten them.
    5. Flip when the edges turn light brown.
    It can be served with sour cream or applesauce.

    German Breakfast Pancake

    Ingredients
    • 6 eggs
    • 3/4 cup all-purpose flour
    • 3/4 cup milk
    • 1/2 tbsp salt
    • 1/4 cup sugar
    • Butter
    • Powdered sugar
    • Red currant jelly
    Preparation
    1. Preheat oven at 500 degrees.
    2. Beat eggs (at room temperature) until light and fluffy
    3. Add small amounts of flour and milk alternately.
    4. Add salt and sugar and beat until blended.
    5. Put pizza pan to heat, in an oven .
    6. Remove pizza pan from the oven and put butter in the pan to melt.
    7. Then pour egg mixture on the pan and place it in an oven. Bake until puffy, crisp and brown (it will rise in peaks).
    8. Sprinkle with powdered sugar and drop spoonfuls of red currant jelly.
    Serve immediately either as a roll, a jelly roll or cut into small pieces.
