Fruit Pizza Recipes

Mixed Fruit Pizza
Ingredients
- 1 package refrigerated sugar cookie dough (slice and bake type)
- ½ tsp vanilla
- ⅓ cup sugar
- 1 package (8 oz) cream cheese
- 1 cup strawberries
- ¼ cup orange marmalade
- 1 cup bananas
- 1 cup fresh or canned peach slices
- 1 cup fresh or frozen blueberries
- 1 tbsp water
Slice the cookie dough thin and keep the cookie slices on a 14 inch pizza pan, overlapping slightly. Bake for 10 minutes at 350º F and then allow it to cool down. In a mixing bowl, cream together cream cheese, sugar and vanilla and spread evenly on the cooled cookie crust. Starting from the center, put the strawberries, then a circle of banana slices, followed by a circle of peach slices and finally a circle of blueberries. If this does not entirely cover the pizza pan, put another circle of fresh fruit, like kiwi or fresh white grapes. Combine orange marmalade and water and pour this mixture evenly over the fruits as a glaze. Refrigerate for an hour or so and serve chilled.
Makeover Fruit Pizza
Ingredients
- 1 cup all-purpose flour
- ¼ cup confectioners' sugar
- 1 package (8 oz) Kraft Philadelphia - Cream Cheese
- 1 tsp vanilla extract
- ½ cup cold butter
- ⅓ cup sugar
- 2 cups halved fresh strawberries
- 1 can (11 oz) mandarin oranges, drained
- 1 cup fresh blueberries
- 5 tsp cornstarch
- 1¼ cup unsweetened pineapple juice
- 1 tsp lemon juice
In a large mixing bowl, put flour, confectioners' sugar and butter; mix well until crumbly. Transfer this mixture on to an ungreased 12 inch pizza pan and bake at 350° F for 10 - 12 minutes or until slightly browned. Allow it to cool on a wire rack. Now take a small bowl and beat the cream cheese, sugar and vanilla until smooth. Spread this mixture evenly over the crust. Arrange the strawberries, oranges and blueberries on the top in any desired pattern. For glaze, in a small saucepan, mix the cornstarch, pineapple juice and lemon juice until smooth. Bring it to a boil and cook and stir for 2 - 3 minutes or until it becomes thickened. Let it cool and then drizzle over the fruits. Refrigerate for an hour or so and serve chilled.
Berry Fruit Pizza
Ingredients
- 18 oz. refrigerated cookie dough (sugar cookie or chocolate chip are best)
- 8 oz. package cream cheese, softened
- ⅓ cup sugar (or the equivalent in Splenda)
- 4 cups assorted fruit like blueberries, raspberries, strawberries, kiwi, etc.
Place the cookie dough on center of a nonstick baking sheet and flatten it with your hands. Then roll the dough out with the help of a lightly floured roller to cover the pan. In a preheated ovenbake the dough at 350° F for 18 - 20 minutes or until it is golden brown and then allow it to cool down. Meanwhile, wash and slice all the berries and in a mixing bowl, beat together the cream cheese and sugar until smooth. Spread this mixture over the crust and arrange the fruit slices in a circular manner (or any other pattern that you like) on the top of cream cheese mixture. Refrigerate for an hour or so, slice with a pizza cutter and serve.
