Fried Chicken Recipes
Fried Chicken is popular all around the world, from the southern states of America where Southern Fried Chicken comes from, to Pollo Fritto of Italy, even the Vietnam has its own version called G Xa. It is believed that the Scots brought the concept of fried chicken to the States, as they preferred chicken that is fried to chicken that was boiled or baked as the English did. These days there are different varieties of Fried chicken, here are some interesting fried chicken recipes.

Southern Fried Chicken

Ingredients:
  • Chicken, cut into pieces suitable for frying - 2 of 3 pounds each.
  • All purpose flour - 2 cups.
  • Salt - 1 teaspoon.
  • Ground black pepper - ½ teaspoon.
  • Milk - 1 cup.
  • Vegetable shortening - enough for frying.
  • Bacon drippings - 1 tablespoon.
Preparation:
  • The chicken needs to be washed and patted dry.
  • Take a mixing bowl, medium sized and mix the flour, salt and pepper.
  • In another shallow bowl, add the milk.
  • Take a skillet and heat the vegetable shortening over medium heat.
  • To this same skillet add the bacon grease, till it is hot.
  • Dip the chicken in the milk and dip in the mixing bowl containing the flour mixture.
  • Now place these pieces of chicken in the skillet with the fat and fry on either side for 20 minutes till it is golden brown and crisp.
  • Serve when hot.
Honey Fried Chicken

Ingredients:
  • Chicken, cut into pieces - 4 pounds.
  • Honey - ½ cup.
  • Cider or raspberry vinegar - 2 tablespoons.
  • Flour - 2/3 cup.
  • Fine bread crumbs, dry - 2 tablespoons.
  • Ground cayenne pepper - 2 tablespoons.
  • Eggs - 2.
  • Buttermilk - ¼ cup.
  • Vegetable oil - 1 cup.
  • Salt and pepper - as per taste.
Preparation:
  • Mix the honey and vinegar well with a whisk and pour over the chicken. Let this marinate for 4 hours in the refrigerator.
  • In another mixing bowl, mix the flour, bread crumbs and cayenne pepper and keep aside.
  • Take a small bowl and whisk the eggs and buttermilk together.
  • Take a large skillet and heat the oil on medium heat.
  • Next remove the chicken from the marinade and pat dry, then place in the egg and buttermilk mixture and then place in the flour mixture and add to the skillet.
  • Let the chicken pieces fry for 10 minutes on each side till it is golden brown and crisp. Pierce with a fork to check for tenderness.
Buttermilk Fried Chicken

Ingredients:
  • Chicken pieces and breast halves - 4 pounds.
  • Salt - 1 teaspoon.
  • Pepper - ¼ teaspoon.
  • Flour - ½ cup.
  • Vegetable oil - 2 tablespoons.
  • Buttermilk - 1 ¼ cup.
  • Green onions, cut into lengths - 3 bunches.
Preparation:
  • In a large plate, add the salt, pepper, flour and the chicken.
  • In a skillet heat a tablespoon of oil over high heat.
  • Fry the chicken for 8 minutes till it is golden brown.
  • Remove the chicken and oil from the skillet and add the buttermilk to it.
  • Then add the chicken again, cover and let it simmer for 20 minutes.
  • Take another skillet and heat 1 tablespoon of oil and add the green onions.
  • Let it cook for 3 minutes and add salt and pepper for taste.
  • In a large platter add the chicken and green onions. Garnish with the juices of the chicken.
  • This recipe goes well with rice or potatoes.
All fried chicken recipes go well with biscuits, coleslaw and corn on the cob, though rice is also a great accompaniment. For an all rounded meal it can be served with mashed potatoes and gravy.
