Fried Chicken Recipes
Love southern style food? Why not try some fried chicken? Here are some fried chicken recipes to suit any palate.
Southern Fried Chicken
Ingredients:
- Chicken, cut into pieces suitable for frying - 2 of 3 pounds each.
- All purpose flour - 2 cups.
- Salt - 1 teaspoon.
- Ground black pepper - ½ teaspoon.
- Milk - 1 cup.
- Vegetable shortening - enough for frying.
- Bacon drippings - 1 tablespoon.
- The chicken needs to be washed and patted dry.
- Take a mixing bowl, medium sized and mix the flour, salt and pepper.
- In another shallow bowl, add the milk.
- Take a skillet and heat the vegetable shortening over medium heat.
- To this same skillet add the bacon grease, till it is hot.
- Dip the chicken in the milk and dip in the mixing bowl containing the flour mixture.
- Now place these pieces of chicken in the skillet with the fat and fry on either side for 20 minutes till it is golden brown and crisp.
- Serve when hot.
Ingredients:
- Chicken, cut into pieces - 4 pounds.
- Honey - ½ cup.
- Cider or raspberry vinegar - 2 tablespoons.
- Flour - 2/3 cup.
- Fine bread crumbs, dry - 2 tablespoons.
- Ground cayenne pepper - 2 tablespoons.
- Eggs - 2.
- Buttermilk - ¼ cup.
- Vegetable oil - 1 cup.
- Salt and pepper - as per taste.
- Mix the honey and vinegar well with a whisk and pour over the chicken. Let this marinate for 4 hours in the refrigerator.
- In another mixing bowl, mix the flour, bread crumbs and cayenne pepper and keep aside.
- Take a small bowl and whisk the eggs and buttermilk together.
- Take a large skillet and heat the oil on medium heat.
- Next remove the chicken from the marinade and pat dry, then place in the egg and buttermilk mixture and then place in the flour mixture and add to the skillet.
- Let the chicken pieces fry for 10 minutes on each side till it is golden brown and crisp. Pierce with a fork to check for tenderness.
Ingredients:
- Chicken pieces and breast halves - 4 pounds.
- Salt - 1 teaspoon.
- Pepper - ¼ teaspoon.
- Flour - ½ cup.
- Vegetable oil - 2 tablespoons.
- Buttermilk - 1 ¼ cup.
- Green onions, cut into lengths - 3 bunches.
- In a large plate, add the salt, pepper, flour and the chicken.
- In a skillet heat a tablespoon of oil over high heat.
- Fry the chicken for 8 minutes till it is golden brown.
- Remove the chicken and oil from the skillet and add the buttermilk to it.
- Then add the chicken again, cover and let it simmer for 20 minutes.
- Take another skillet and heat 1 tablespoon of oil and add the green onions.
- Let it cook for 3 minutes and add salt and pepper for taste.
- In a large platter add the chicken and green onions. Garnish with the juices of the chicken.
- This recipe goes well with rice or potatoes.
