A cherry pie is nothing but a pie baked with cherries. A traditional dessert, ate in North America, it usually contains Morello cherries and is often topped with fancy pastry patterns. A fresh cherry pie is very common in festive meals during Christmas, Easter or Thanksgiving.
Fresh Cherry Pie Recipes from Scratch
Traditional Fresh Cherry Pie
Ingredients:
Frozen pastry for the double crust pie
Tapioca - 4 tablespoons
Pinch of salt
White sugar- 1 cup
Fresh pitted cherries - 4 cups
Almond extract - ¼ teaspoon
Vanilla extract -½ teaspoon
Liquefied butter - 2 tablespoons
Preparation:
- First of all, preheat oven to 400°F.
- Place the bottom crust in the pie pan and set aside the top crust.
- Now combine tapioca, salt, sugar, cherries and the almond and vanilla extracts.
- Allow the mixture to stand for fifteen minutes.
- Put the mixture into the bottom crust and dot with butter.
- Now, place the top crust, flute edges and cut vents on the top crust.
- Place the pie on a foil lined cookie sheet.
- Bake the pie for fifty minutes in the preheated oven, until golden brown.
- Serve with whipped cream or vanilla ice cream.
Ingredients:
Semisweet chocolate - 2 cups
Whipped cream - ½ cup
Butter - ¼ cup
Chocolate crumb pie crust
Fresh pitted cherries - 4 cups
Sugar - ½ cup
Cream cheese - 8 oz
Egg - 1
Almond extract - ¼ teaspoon
Maraschino cherries with stems -16
Thawed whipped topping - 2 cups
Preparation:
- First of all prepare the cherry filling by combining the sugar, almond extract and the cherries.
- Now, preheat the oven to 350 degrees.
- Microwave the chocolate morsels and cream in a bowl for about one to two minutes until the chocolate begins to melt.
- Whisk in the butter until smooth.
- Allow the mixture to cool until it reaches a spread-able consistency.
- Spoon half of the chocolate mixture into piecrust.
- Now, spoon the cherry pie filling evenly over chocolate mixture in the piecrust.
- Place the pie on a baking sheet and set aside.
- Now, beat together cream cheese, sugar, egg and almond extract.
- Pour this mixture evenly over cherry pie filling.
- Bake for 30 minutes and then remove pie from oven and allow it to cool.
- Microwave the reserved chocolate mixture at medium power for 1 minute.
- Now, dip the cherries in chocolate mixture and let them firm up on a sheet of wax paper.
- Spread the remaining chocolate mixture evenly over top of pie.
- For decorating, spoon uniform sized dollops of whipped topping and place cherries on each dollop.
