Apple Walnut French Toast Recipe
What you will need-
- Cream cheese (8 oz - ½ pk)
- Apple-peeled, quartered and cored (2)
- Sugar- Light brown (3 tbl)
- Finely chopped walnuts (2/3 cup)
- Butter (1½ tbl)
- Sugar (5 tablespoons and an additional ½ cup)
- Eggs (2)
- Applejack or brandy (1 tbl)
- Ground nutmeg (1/8 tsp)
- Ground cinnamon (1/8 tsp)
- Ground mace (1/8 tsp)
- Heavy cream (1/4 cup)
- Challah or brioche (4 ¾ Inch slices of sweet and light bread)
- Lemon juice (2 tsp)
- Fresh mint sprigs (Optional)
Begin with the cream cheese spread. Use a food processor that is fitted with a chopping blade. Mix the cream cheese, the 2 apple quarters, the walnut and the brown sugar in this and puree it together. This needs to be placed in the refrigerator and kept aside only till its ready to be used later.
Next comes the walnut brittle. For this, take a small saucepan and melt around ½ tablespoon butter over low heat. Add 2 tablespoons of walnuts and 5 tablespoons of sugar. Cook the mixture, stirring it continuously. Wait until the sugar crystallizes which should take around 10 minutes approximately. Now, remove this from the heat immediately and pour this mixture over a baking sheet, which is lightly greased. Now, let this cool down and once cooled, break into little pieces.
To prepare the French toast, you need to heat the oven to 350 degrees F. Meanwhile, combine the eggs with ½ cup of heavy cream, nutmeg, cinnamon, applejack, mace, and remaining walnuts. You need to soak the bread in this mixture ensuring both sides are soaked equally. Place this aside.
You also need to prepare the caramel sauce meanwhile. For this, take a small saucepan and cook the ½ cup of sugar with the lemon juice on medium to low heat. Wait until the sugar turns golden. Then, reduce the heat slowly and add the remaining heavy cream. Mix it well. You need to keep this sauce warm over low heat.
Now, melt around ½ tablespoon of butter in a large skillet. Add the slices of bread and cook this till it turns golden brown. Flip both sides. Once it's cooked, transfer the slices of bread onto a baking sheet. Cut this diagonally in half. Follow this by dividing the cream cheese and spreading it evenly over the slices.
Bake these slices for at least 10 minutes. Whilst this is being done, you need to slice the remaining apple quarters. Melt the remaining butter in the same skillet and cook the apple slices in it.
Pour the caramel sauce onto 2 plates and place the half slices of the French toast on each plate. Top this with apple slices and sprinkle some walnut brittle over this. Garnish with the fresh mint sprigs if required.
