Almond Crusted Chicken Fingers
Ingredients
  • ½ cup sliced almonds
  • ¼ cup whole wheat flour
  • 1½ teaspoon paprika
  • ½ teaspoon dried mustard and garlic powder
  • ¼ teaspoon salt
  • ⅛ teaspoon freshly ground pepper
  • 4 egg whites
  • 1 pound chicken tenders
  • 1½ teaspoon extra virgin olive oil
Method
Preheat the oven to 475 degree F and coat the baking dish with some cooking spray. Now in a food processor, add almonds, flour, paprika, garlic powder, mustard, salt, and pepper and grind until a finely powdered mixture is obtained. Put the mixture in the baking dish. Meanwhile, take egg whites and dip the chicken pieces in them and later transfer these to the baking dish to coat with the mixture. Now, bake the chicken fingers on the baking dish until they are crispy and golden brown for about 25 minutes. Your chicken fingers are ready to eat; certainly a quick dinner idea for kids!

Sweet and Sour Chicken with Brown Rice
Ingredients
  • 2 cups brown rice
  • ¼ cup rice vinegar
  • 2 tablespoons soy sauce
  • 2 tablespoons cornstarch
  • 2 tablespoons apricot preserves
  • 2 tablespoons canola oil
  • 1 pound chicken tenders
  • 4 cloves garlic minced
  • 2 teaspoons finely grated ginger
  • 1 cup chicken broth
  • 6 cups vegetable pieces of broccoli
  • 1 cup bell peppers and snow peas
  • Sliced water chestnuts
Method
Mix vinegar, soy sauce, cornstarch and apricot preserves in a bowl. Meanwhile, in a cooking pan, cook chicken in oil until it's dark brown. Add the remaining one tablespoon oil along with garlic, ginger and the chicken broth and bring the mixture to boil while stirring constantly. Add the rest of the vegetables and cook them as well. Now add the sauce mixture prepared previously and simmer until the sauce has thickened and till chicken is cooked properly.

Chicken and Spaghetti Parmesan
Ingredients
  • 1 bowl cooked spaghetti or pasta
  • 1 cup pasta sauce
  • 1 cup cooked chicken breasts
  • Grated Mozzarella cheese
  • Parmesan cheese
Method
Spread pasta sauce over cooked pasta and mix thoroughly. Spread this mixture onto a baking dish. Sprinkle cheese over the mixture and top it with the chicken pieces. Pour some more sauce and the grated cheese and bake the mixture for 20-30 minutes at 350 degree F. Serve each chicken piece with some spaghetti.

Green Pizza
Ingredients
  • 1 pound pizza dough; prepared
  • 2 cups broccoli, chopped
  • 6 cups arugula; chopped
  • Pinch of salt and ground pepper
  • ½ cup pesto
  • ¼ cup water
  • 1 cup shredded Mozzarella cheese
Method
Spread the dough on the baking sheet and bake for 8 to 10 minutes at 450 degree F. Meanwhile, cook the broccoli and arugula in a cooking pan until it becomes crisp. Take out the baked pizza base; top it with pesto and the broccoli and arugula mixture and sprinkle grated cheese. Again bake it for 10 minutes until the cheese melts.

Roasted Pecan Salmon
Ingredients
  • Salmon fillets
  • pinch of salt and pepper
  • 1 tablespoon honey and mustard
  • Bread crumbs
  • 2 tablespoons chopped pecans
  • 1 tablespoon parsley
  • Lemon wedges
Method
Wash the salmon fillets properly. Coat them with salt and pepper. Meanwhile, mix honey and mustard together and coat the fillets in this mixture. Next, roll them over breadcrumbs and bake them at 400 degree F for 10 to 15 minutes. Serve them with parsley and lemon wedges.
