Recipe for Eye of Round Roast in Crock Pot
Ingredients
- Eye of round roast, 2 pounds
- Beef bouillon cubes, 2
- Spice supreme steak seasoning, 3 tablespoons
- Water, 2 cups
- Worcestershire sauce, 3 tablespoons
- French onion soup mix, 1 packet
For this crockpot recipe, make slits on the eye of round roast so that the flavorings get marinated into it. Take a medium-sized bowl and add 2 cups of water. Dissolve the beef bouillon cubes in the water and transfer the French onion soup mix into the bowl. Add the steak seasoning and Worcestershire sauce to the mixture. Stir thoroughly till all the ingredients are combined. Rub the Worcestershire sauce and spice supreme steak seasoning, (quantity according to your taste and preference) on the roast. Now place the eye of round roast in crock pot and pour the beef mixture. Cook the eye of round roast in the crock pot over low heat for about 7 to 8 hours till all the ingredients are incorporated properly.
Eye of Round Crock Pot Roast with Vegetables
Ingredients
- Eye of round roast, 1½ pounds
- Medium-sized onion, cut in chunks, 1
- Celery stalks, halved and cut, 3
- Medium-sized potatoes, cubed, 3
- Medium-sized carrots, peeled and cut into pieces, 2
- Fresh parsley, coarsely chopped, ½ cup
- Beef stock, ½ cup
- Water, ¼ cup
- Low sodium soy sauce, ½ teaspoon
- Cornstarch, 1½ tablespoons
- Red wine vinegar, 1½ tablespoons
- Garlic cloves, minced, 5
- Freshly ground pepper, ½ teaspoon
- Salt to taste
In a large bowl, place the eye of round roast along with all the vegetables and seasonings, and mix thoroughly. Take a separate small bowl and combine the beef stock and red wine vinegar. Transfer the roast and vegetables to a crock pot and pour the mixture on top. Cover the crock pot with a lid and allow this mixture to cook for about two hours on a low flame. Make a smooth mixture of the cornstarch and water and add it to the crock pot. Stir the vegetables and beef and combine the ingredients. Replace the lid and cook for about three hours on high flame, till the gravy becomes thick and you get the aroma of the seasonings. You can also use the same method to cook rib eye roast.
Recipe for Eye of Round in Roasted Garlic Sauce
Ingredients
- Lean eye of round roast, 2 pounds
- Whole garlic heads, 4
- Garlic cloves, peeled, 10
- Fat free beef broth, divided, 2 cups
- Large shallots, peeled, 3
- Dried marjoram, divided, 4 teaspoons
- Brandy, 1½ tablespoons
- Ground pepper, 1 teaspoon
- Salt to taste
Pour ½ cup of beef broth into baking dish and place the skinned garlic heads into the broth. Cover the dish and cook it in a preheated oven at 350 degrees for about one hour. Remove the baking dish from the oven and allow the mixture to cool down. Separate the cloves from the garlic head and extract the pulp after discarding the peel. In a food processor container, add the cooking liquid, remaining beef broth, 1 teaspoon marjoram, garlic pulp and salt to taste and blend it till the ingredients become incorporated and become garlic sauce. Now place the shallots, garlic cloves, marjoram and salt to taste in the processor and combine to form a coarse paste. With the help of a paring knife, slit the roast and spoon in the marjoram paste into the slits. Coat the roast with the remaining paste and place it in a crockpot. Pour the brandy and the garlic sauce into the pot and cover it. Cook this on low flame for about six hours till all the ingredients are cooked and blended together.
