Olive and Mustard Egg Salad
If you love a little tang and spice, here is an egg salad recipe for your taste buds.
Ingredients
- Hard boiled eggs, peeled and chopped - 4.
- Mayonnaise - 1 cup.
- Pimento stuffed green olives or any other you prefer, chopped - 6 large.
- Sweet white onion, chopped fine - 1 teaspoon.
- Mustard preferably Dijon - 1 teaspoon.
- Paprika - 1/8 teaspoon.
- Parsley, fresh and chopped - 1 tablespoon.
- Sweet pickle relish - 1 tablespoon.
- Salt and pepper - as per taste.
- Take a large mixing bowl and in it mix the mayonnaise, mustard, relish and paprika.
- Blend it well into a smooth paste.
- Next add all the other ingredients into the bowl and mix well.
- Add the salt and black pepper and sprinkle with parsley as a garnish.
- Chill in the refrigerator for at least an hour and serve.
For all those gourmet food lovers, this is the perfect egg salad recipe. This is a great recipe for salads for dinner parties or as a cocktail snack.
Ingredients:
- Hard boiled eggs, peeled and chopped - 4.
- Mayonnaise - 1/3 cup.
- Smoked Salmon, diced - 2 ounces.
- Shallot, finely chopped - 1.
- Celery stalk, leaves or end, chopped - 1.
- Sun-dried tomatoes, chopped finely - 1 tablespoon.
- Sherry Vinegar - 1 teaspoon.
- Paprika - 1/8 teaspoon.
- Dill, fresh and chopped - 1 tablespoon.
- Salt and Pepper - as per taste.
- Take a large mixing bowl and in that combine the mayonnaise, shallot, vinegar, tomatoes, paprika and the dill. Mix well so that it makes an even dressing for the rest of the ingredients.
- Add the other ingredients, half the parsley and mix well.
- Add salt, pepper and garnish with parsley and sun-dried tomatoes.
- Chill for 2 hours before serving.
Bacon and Eggs go really well don’t they? But bacons and egg in a salad? Yes this is a recipe that combines eggs and bacon sausages with a parmesan garnish.
Ingredients:
- Hard boiled eggs, peeled and chopped - 4.
- Breakfast bacon sausages, cooked and chopped - 5.
- Light Mayonnaise - 1/3 cup.
- Sweet white onion, chopped fine - 2 tablespoons.
- Parmesan cheese, finely grated - 1 tablespoon.
- Lemon juice, fresh - 1 teaspoon.
- Yellow mustard or Dijon - 1 teaspoon.
- Salt and Pepper - as per taste.
- In a mixing bowl, large or medium, add the mayonnaise, lemon juice, mustard and sweet white onion and mix well. This needs to be mixed well because this is going to be the dressing for the ingredients.
- Now add the eggs and sausages.
- Add the salt and pepper.
- Chill for an hour before serving, this ensures that the flavors combine well.
