Easy Vegetable Stir Fry
Ingredients
- 1 tbsp. oil
- 4 cups sliced zucchini
- 1 onion, chopped
- 1 tsp. dried basil leaves
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 3 tomatoes, sliced
- 1 cup shredded cheese
Heat oil in heavy skillet. Add zucchini and onion and stir fry for 3-4 minutes until the onion is crisp tender. Add the seasonings mentioned and layer tomatoes over the vegetables. Sprinkle cheese over all the vegetables. Cook over medium heat for 2-3 minutes until the cheese melts. Serve over hot cooked rice.

Pineapple Tofu Stir Fry Recipe
Ingredients
- 1can pineapple chunks
- 5 teaspoons rice vinegar
- 1 tablespoons reduced-sodium soy sauce
- 1 tablespoon ketchup
- 2 teaspoons brown sugar
- 7 ounces extra-firm, water-packed tofu
- 1 teaspoon cornstarch
- 3 teaspoons canola oil
- 1 tablespoon minced garlic
- 2 teaspoons minced ginger
- 1 large bell pepper
Whisk 3 tablespoons pineapple juice, vinegar, soy sauce, ketchup and sugar in a small bowl until smooth. Place the tofu in a medium bowl and toss with 2 tablespoons of the sauce. Marinate for 5 minutes and add cornstarch to the remaining sauce and whisk until smooth. Heat 2 teaspoons of oil in a large nonstick skillet over medium-high heat. Transfer the tofu to the skillet and whisk the remaining marinade into the bowl of sauce. Cook the tofu, stirring every 1 to 2 minutes, until golden brown. Transfer the tofu to a plate. Add the remaining 1 teaspoon oil to the skillet and heat over medium heat. Add garlic, ginger and cook, stirring constantly, until fragrant, about 30 seconds. Add bell pepper and cook, stirring often, until just tender for about 2 to 3 minutes. Pour in the sauce and cook, stirring, until thickened, for about 30 seconds. Add the tofu and pineapple chunks and cook, stirring gently, for about 2 minutes more.

Easy Stir Fry Chicken Recipe
Ingredients
- 1 pound boneless, skinless chicken breasts, trimmed off fat
- 1/4 teaspoon of salt, or to taste
- Freshly ground pepper to taste
- 1/3 cup all-purpose flour
- 3 teaspoon(s) extra-virgin olive oil, divided
- 4 cups sugar snap peas or snow peas, trimmed off stem ends and strings
- 1 can reduced-sodium chicken broth
- 3 cloves garlic, minced
- 1/4 cup finely chopped fresh parsley
- 1 tablespoon freshly grated lemon zest
- 1 tablespoon lemon juice
Cut chicken into 1-by-2-inch strips and season with salt and pepper. Add flour to a shallow pan and dredge the chicken strips in it, shaking off excess. Heat 1 teaspoon oil in a large nonstick skillet over medium-high heat. Add peas and stir-fry for 2-3 minutes, until bright green. Transfer the peas to a large bowl and add the remaining 2 teaspoons oil to the pan and heat on medium-high until shimmering. Add the chicken and cook for 4 to 5 minutes, stirring, until lightly browned and opaque in the center. Transfer the chicken to the bowl with the peas and add broth and garlic to the pan; cook for 6 to 8 minutes until reduced to 1 cup. Reduce heat to medium and return the chicken and peas to the pan. Cook until heated thoroughly. Add parsley, lemon zest and lemon juice. Serve immediately.
