Tuna Casserole
Ingredients
  • 2 cups macaroni
  • 1 can tuna
  • ½ tsp garlic
  • 1 small onion, chopped
  • 2 tbsp margarine/butter
  • 1 can Campbell's Cream of Celery Soup
  • 1 small package cream cheese
  • ½ tsp dry mustard
  • ¼ cup grape nuts
  • ¼ cup milk
Directions
Cook macaroni as per the package instructions and keep it aside. In a casserole dish, add cream of celery, softened cream cheese and milk; mix well until smooth. Put tuna, garlic, dry mustard, onion and cooked macaroni and stir well. Add grape nuts to the melted margarine and spread this mixture over the top of the casserole. Slow Cooker Ribs
Ingredients
  • 4 pounds pork baby back ribs
  • ½ cup packed brown sugar
  • 2 cups ketchup
  • 4 tbsp vinegar
  • 1 cup chili sauce
  • 1 dash hot sauce
  • 2 tsp dried oregano
  • 2 tsp Worcestershire sauce
  • Salt and pepper to taste
Directions
Season the ribs with salt and pepper and put them in a shallow baking pan. Brown the ribs in a preheated oven for 15 minutes at 400°F. Now turn over and brown the other side of the ribs for another 15 minutes; drain the fat. In a mixing bowl, combine ketchup, chili sauce, brown sugar, vinegar, oregano, Worcestershire sauce, hot sauce, salt and pepper. Blueberry Muffins
Ingredients
  • 3 cups of all-purpose flour
  • 10 tbsp unsalted butter, softened
  • 1 tsp grated lemon peel
  • ½ tsp baking soda
  • 1½ cups blueberries
  • 1½ cup plain yogurt
  • 1 cup sugar
  • 2 large eggs
  • 1 tbsp baking powder
  • ½ tsp salt
  • 1 tbsp flour (if using defrosted frozen berries)
Directions
Whisk together the flour, baking powder, baking soda and salt; keep it aside. In a mixing bowl, cream butter and sugar together until it becomes fluffy. Add eggs, one at a time and beat well along with the grated lemon peel. Add the dry ingredients and yogurt to the bowl in three fractions and beat well until incorporated. Now fold in the berries but if you are using frost berries, defrost them, remove the excess liquid and coat them in a light dusting of flour. Take a standard (12-muffin) muffin pan and coat each cup with oil or butter, using a pastry brush. Transfer the muffin dough evenly into each cup and bake in a preheated oven at 375°F, for 25-30 minutes. Insert a long toothpick into the center of the muffins to check whether they are baked or not and if the toothpick comes out clean, it means the muffins are ready.
