And one way to make this time worthwhile is through a beautiful and delicious meal. You don't need to slave in the kitchen or order takeout. All you need are quick and easy dinner ideas for two, and you're all set. Plus, you don't need to sacrifice on taste and class. Lime-Blueberry Margarita for Two

Ingredients
  • 3 oz. tequila
  • 2 cups ice
  • 2 tablespoons limeade, frozen
  • 1 tablespoon lime juice
  • 1 cup blueberries, frozen
  • 1 cup blueberry nectar
  • 1 lime wedge
  • ¼ cup seltzer
  • Coarse salt
Directions

In a blender, mix blueberries, seltzer, blueberry nectar, limeade, lime juice, tequila, and ice together. Turn the blender on and make a smooth mixture. Take 2 margarita glasses and rub the rims with the lime wedge. Dip the glasses in coarse salt and add the margarita in. Enjoy the drink!

Broccoli-Chicken Salad for Two

Ingredients
  • 2 tablespoons sunflower kernels, salted
  • 2 tablespoons golden raisins
  • 2 bacon strips, cooked & crumbled
  • 1½ cups chicken breast, cooked & cubed
  • 1½ cups broccoli florets
  • 1 tablespoon sugar
  • 1 tablespoon red wine vinegar
  • ¼ cup red onion, chopped
  • ⅓ cup mayonnaise
  • Salt and black pepper, for taste

Take a bowl to mix cooked chicken cubes, broccoli, onion, sunflower kernels, golden raisins, and crumbled bacon in. Mix with a wooden spoon. In a different bowl, mix mayonnaise with sugar, red wine vinegar, salt, and black pepper. Add the dressing in the bigger bowl and toss properly. Keep the salad in the refrigerator till you have to serve it.

Black-Eyed Pea Soup for Two

Ingredients
  • 1 ½ teaspoon butter
  • 1 can black-eyed peas, drained & rinsed
  • 1 cup water
  • ½ cup cooked ham, cubed
  • ½ teaspoon Italian seasoning
  • ¼ cup celery, sliced
  • ¼ cup onion, chopped

In a non-stick pan, add butter with celery and onion. Sauté till tender and then add peas and tomatoes. Stir and add water; boil the mixture properly. When the mixture is boiling, add the ham, Italian seasoning, salt, and black pepper. Lower the heat and simmer for about 15 to 20 minutes. When the soup is completely heated, remove from stove, and serve.

Mushroom-Chicken-Bacon for Two

Ingredients
  • 2 bacon strips, halved
  • 2 chicken breast halves, skinless & boneless
  • 2 tablespoons Dijon mustard
  • 1 tablespoon mayonnaise
  • 1 tablespoon light corn syrup
  • ½ teaspoon mushroom, sliced
  • ¼ cup honey
  • ½ dried onion, minced
  • ⅓ cup mozzarella cheese, shredded
  • Salt and black pepper, for taste

Preheat the oven 350°F. Take a skillet so we can cook the bacon till it get crisp. Add mushrooms when bacon is almost cooked. Once ready, place on a few paper towels. Use an empty wine bottle to flatten chicken breasts till they are ½'' thick. Season them with salt and black pepper; cook in the same skillet. Meanwhile, take a small bowl to mix mayonnaise, mustard, corn syrup, honey, and onion together. When the chicken breasts are ready, transfer them in a 1 quart baking dish. Place bacon and mushroom mix on top and sprinkle mozzarella cheese on top. Bake the chicken in the preheated oven for 20 to 25 minutes. When the chicken is cooked thoroughly, remove in a platter and serve with the honey-mustard mix.

Broiled Cod w/Rice for Two

Ingredients
  • 2 teaspoons soy sauce
  • 2 cups rice, cooked
  • 2 tablespoons orange juice
  • 1 tablespoon coconut, toasted
  • 1 can pineapple, drained (save the juice)
  • 1 teaspoon orange peel, grated
  • ½ lb. cod or white fish fillet
  • ½ orange, peeled & chopped
Directions

Turn the dial on your oven to broil. In a bowl, mix pineapple juice, orange juice, and soy sauce together. Marinate the fish in this sauce for 10 minutes and remove. Apply cooking spray over a broiler pan and place the marinated fish in it when hot. Broil the fish on all sides. When the fish flakes with a fork, you know it's ready. Meanwhile, you need to ready the marinade. In a non-stick pan, add the marinade we made earlier and simmer for about 2 to 3 minutes. Add pineapple pieces, orange pieces, cooked rice, and green onion, mix properly. Place the cooked rice in a platter and top it with broiled fish. Sprinkle toasted coconut and orange peel. Serve and enjoy.

Chocolate Fondue for Two

Ingredients
  • 8 pieces pineapple
  • 4 strawberries
  • 3 oz. bittersweet chocolate, chopped
  • 2 tablespoons heavy cream
  • 1 banana, peeled, 8 pieces
  • 1 tablespoon brewed espresso
  • ½ teaspoon vanilla extract
  • Salt, for taste
Directions

In a microwave-safe bowl, add chocolate, espresso, vanilla extract, salt, and heavy cream together. Place the bowl in the microwave and turn it on for 20 seconds. Bring the bowl out and stir. Again place the bowl in for 20 seconds; stir again. Do this till the chocolate melts completely. Pour the melted chocolate mix in a bowl with fresh fruit in a platter. Feed the chocolate-dipped fruits to one another.
