Soup

Ingredients
  • Chicken Broth 3 cups
  • Water 2 cups
  • Green Onions ½ cup
  • Soy Sauce
  • Garlic Cloves 3
  • Ginger ½ tsp
  • Bok Choy 2½ cups
  • Bell Peppers
  • Noodles or Pasta
  • Cooked Chicken 1½ cup
  • Chinese Five Spice Powder
Procedure
  • Choe the garlic and ginger finely or make a paste from them.
  • Chop the bok choy, bell peppers and chicken.
  • Cook the noodles and break them into small pieces.
  • In a big sauce pan, combine water, chicken broth, five spice powder, soy sauce and the garlic and ginger paste.
  • Stir and bring the mixture to a boil.
  • When the mixture starts boiling, add the chopped bok choy and bell peppers.
  • Allow them to cook in the mixture for some time.
  • Add the cooked noodles and the chicken.
  • Adjust the salt and pepper.
  • Serve hot.
Salad

Ingredients
  • Cucumbers 3
  • Tomatoes 4
  • Spring Onions 2
  • Feta Cheese 2 ounces
  • Olives a few pieces
  • Lettuces any kind
  • Fresh Lemon Juice 3 tbsp
  • Olive Oil 1 tbsp
  • Chilly Flakes and Salt as per taste
Procedure
  • Chop the cucumbers, tomatoes and feta cheese in small cubes.
  • Chop the spring onions and the olives in small rounds.
  • Wash and dry the lettuce. Break them into small pieces.
  • In a bowl combine all the vegetables and keep aside.
  • Combine the olive oil, lemon juice, chilly flakes and salt in a small bowl and mix them thoroughly.
  • Pour this dressing over the chopped vegetables.
  • Garnish with some grated cheese, if desired.
Spaghetti

Ingredients
  • Basil Leaves 1½ cups
  • Garlic 4 cloves
  • Olive Oil 3 tbsp
  • Pine Nuts ½ cup
  • Parmesan Cheese 3 tbsp
  • Spaghetti 8 ounces
  • Salt and pepper to taste
Procedure
  • Cook the spaghetti as per the instructions on the packet and keep aside.
  • Remove the stems from the basil leaves and wash it and clean it thoroughly.
  • Chop the garlic cloves really fine and toast some of the pine nuts.
  • To make the sauce, combine all the ingredients except the spaghetti in a blender and puree the mixture.
  • Put the spaghetti in a bowl and pour the sauce over the hot spaghetti.
  • Serve immediately.

Sweet Hummus

Ingredients
  • Olive Oil 1 tbsp
  • Fresh Lemon Juice 1½ tbsp
  • Parsley 2 tbsp

  • Garbanzo Beans 1 can
  • Bell Peppers 2 cups
  • Salt and Pepper to taste
Procedure
  • Chop the bell peppers and the parsley.
  • Saute the bell peppers in olive oil in a saucepan.
  • In a blender or a food processor, combine all the ingredients including the bell peppers and grind till the mixture is very smooth.
  • Refrigerate your hummus till you need to serve it.
Low Fat Dip

Ingredients
  • Low Fat Cream Cheese 8 ounces
  • Artificial Sweetener 1 cup
  • Brown Sugar ¼ cup
  • Vanilla Extract or Essence 1 tsp
  • Sliced Fresh Fruits 2 cups
Procedure
  • Combine all the ingredients, except the sliced fruits in a food processor and blend it till it becomes very smooth.
  • Refrigerate this mixture and use the fresh sliced fruits to dip in this low-fat dip.
