Easy Diabetic Desserts

It's not like, if you suffer from diabetes, your life is over as far as eating food is concerned. There are many diabetic recipes, especially desserts which are equally tasty and give you a reason to smile about :) Take a look on the following recipes.
I don't need to mention that diabetes is the disturbance in the blood sugar level and people suffering from it are often told to cut down on sweets and calories. But who wants that? We all love eating food and are aware of the diabetic diet as well. But when it comes to desserts, we can't control ourselves, right? We have n-number of healthy yet yummy recipes which diabetics can eat without worrying too much. I am sure you all are aware of the "sugar free" fad that's going on. Diabetic people can always opt for sugar free ice creams or sugar free chocolate chip cookies recipes and enjoy the desserts as well.

Chocolate Mousse
Ingredients: non sweetened chocolate (3 ounce), low-fat milk (one cup), Splenda (half cup), cornstarch (one teaspoon), heavy cream (half cup), sliced strawberries (3 cups), any egg substitute, Grand Marnier (2 tablespoons)

Procedure:
  • Mix Splenda, cornstarch, cream, egg substitute and Grand Marnier in a bowl.
  • Heat chocolate and milk in a saucepan on a medium flame until chocolate melts completely.
  • Add the bowl mixture into the saucepan and stir it until the mixture begins to thicken.
  • Remove from the flame and then blend it properly to get the proper texture.
  • Pour it in another bowl and refrigerate for 2-3 hrs.
  • Whip the mixture with cream and you can serve the mousse with strawberry toppings. Your dessert is ready!
Apple Pecan Upside Down Cake
Ingredients: butter (one-fourth cup), flour (one cup), baking powder (one teaspoon), cinnamon (2 teaspoons), brown sugar (half cup), vanilla (1 teaspoon), toasted pecans (half cup), thinly sliced apples (3), granulated sugar or sugar substitute (one-fourth cup), eggs (2)

Procedure:
  • Foil a baking pan and spray nonstick cooking spray onto it. Mix flour, cinnamon, baking powder, salt in a bowl.
  • Beat butter in a bowl with brown sugar and granulated sugar with the help of a blender. Add egg white and vanilla and continue beating. Now add flour mixture in it. Mix properly.
  • Add the sliced apples in the baking pan and add the above mixture onto them and spread evenly.
  • Bake for 25-30 minutes. Cool the pan and invert onto a serving plate. Remove the foil carefully.
  • Serve it warm with sliced apple pieces.
Crispy Oatmeal Cookies
Ingredients: butter (half cup), brown sugar (half cup), warm water (one-fourth cup), quick roll oats (one cup), cinnamon (one teaspoon), baking soda (half teaspoon), flour (one cup)

Procedure:
  • Beat butter, sugar and water together. Add flour slowly.
  • Mix all the dry ingredients together and add to the above mixture. Keep on adding flour simultaneously.
  • Stir until the dough is stiff enough.
  • Divide the dough in 3 parts and roll each one and cut into pieces.
  • Place the cookies on the oil greased butter sheet and bake at 350 degree F for about 10 minutes.
  • You can bake until they are golden brown.
Diabetic Fudge
Ingredients: low-fat milk (one cup), cocoa (3 tablespoons), liquid sweetener (half cup), vanilla (one teaspoon), nuts (one-fourth cup), bread crumbs (half cup)

Procedure:
  • Add milk and cocoa powder in a saucepan. Beat properly. Add sweetener and salt and bring it to boil.
  • Mix the rest of the ingredients in it and cool the mixture.
  • Make balls and roll them in the bread crumbs and serve.
