Preparation for Making Deviled Eggs
There are three essential aspects that need to be taken care of before you can start preparing the actual deviled egg dish. This includes the hard boiling of the eggs, peeling hard-boiled eggs and scooping out of the egg yolk from the boiled eggs. You must choose eggs that are at least a week old rather than using fresh eggs. This will enable you to peel them well and it also makes the hard boiling easier. To get the egg yolk to the center, place the eggs on their sides a night prior to preparing the deviled eggs. To hard boil the eggs, place them in a large spacious pot. The eggs should be well spaced in the pot so that they do not crack or break when they bump into each other while cooking. Then, add cold water to the large pot, the water should be enough to cover the eggs by an inch. Place the pot on medium high flame and bring the water in it to a boil. This may take around 5 minutes and then add a teaspoon of salt to the water. Let the eggs sit in the water for around half an hour and then remove them and cool them. Place them in a bowl full of ice water to cool the eggs rapidly, and leave them like this for around 20 minutes. Peel the hard-boiled eggs and keep them aside.
Basic Deviled Eggs Recipe
Ingredients
6 hard-boiled eggs
2 tablespoons mayonnaise
1 ½ teaspoons Dijon mustard
1 green onion, very thinly sliced (slice a little of the green and keep separate from the white)
a few leaves of fresh parsley, finely chopped
freshly ground black pepper
salt, to taste

Method
Boil and peel the eggs and set aside to cool for a while. When the eggs have cooled thoroughly, halve the eggs and scoop out the egg yolks into a separate glass bowl. Mash the egg yolks thoroughly in the bowl and then add to it the mayonnaise and Dijon mustard. Stir well until it gets to the consistency that is desired. Then, add the white part of the onions and the parsley to the yolk mixture and mix well. Add salt and pepper to taste and fill this mixture into a pastry bag. Fill the egg whites with the mixture and then sprinkle some green onions, paprika and parsley as the garnish.
Green Chili Deviled Eggs Recipe
Ingredients
1 (4-ounce) can of diced green chilies
12 large eggs, hard-boiled, chilled and peeled
½ cup mayonnaise
1/8 teaspoon hot pepper sauce
Method
Boil and peel the eggs and set aside to cool for a while. Then, cut the eggs into halves and scoop out the egg yolks into a separate glass bowl. Mash the yolks thoroughly and add to it the mayonnaise, chilies and hot pepper sauce. Fill the egg whites with this mixture and garnish with paprika.
Three Cheese Deviled Eggs Recipe
Ingredients
6 eggs, hard-cooked, peeled and cut lengthwise
¾ cup Mayonnaise
2 tablespoons finely shredded Monterey Jack cheese
2 tablespoons finely shredded Swiss cheese
2 tablespoons minced chives, divided
1/8 teaspoon ground mustard
1/8 teaspoon pepper
2 ounces process cheese (Velveeta), cubed
dash of paprika
Method
Boil and peel the eggs and set aside to cool for a while. Then, cut the eggs into halves and scoop out the egg yolks into a separate glass bowl. Mash the yolks thoroughly and add to it the mayonnaise, mustard, a tablespoon of minced chives, shredded cheese and black pepper. Place the process cheese in the microwave and melt it, then add it to the egg yolk mixture. Fill the egg whites with the mixture and garnish with paprika and chives.
