Easy Chicken Soup Recipes
Recipes for chicken soup can be limitless and colorful as your imagination. What’s more, if you want to be a little different and make your soup a little more exotic, you could also substitute turkey for the chicken or use a combination of both. But then what’s the point of chicken soup?
I have never been one to enjoy cooking or doing any kind of activity in the kitchen. Those long hours of standing in front of the stove stirring and sweating away generally put me off. But, when it comes to making chicken soup – I am always ready! With a dash of creativity and a bit of patience, you can have the most refreshing and mouth wateringly delicious chicken soup ever. For the tired, for the bored, for the sick, for the depressed – chicken soup has the uncanny power of refreshing them all! Here are a couple of superb recipes.
Spicy Chicken Soup with Vegetables
This is an easy crockpot recipe for chicken soup that is a magical blend of aromatic spices and delicious vegetables.
Ingredients:
- Boneless chicken tenders or breasts cut into cubes, 1 pound.
- 2 potatoes cut into cubes.
- 1 diced carrot.
- One and a half cups of corn kernels, frozen.
- ½ a cup of onions, chopped.
- ½ a cup of celery, chopped.
- Dijon mustard, 2 tbsp.
- ¼ tsp of black pepper, ground.
- Hot pepper sauce or a dash of cayenne.
- Garlic powder, 1/8 tsp.
- Two and a half cups of vegetable juice.
- One and a half cups of chicken broth.
- Salt, to taste.
Mix the chicken pieces along with the mustard, vegetables, black pepper, cayenne pepper and the garlic powder in a slow cooker. Pour the chicken broth and the vegetable juice over this. Cover the cooker and then let it cook for about 7 to 9 hours. Once it is done taste it and add salt if required. Serves about 4 to 6 people.
Curried Chicken Soup
This is an easy recipe for curried chicken and should be ideally served with rice.
Ingredients:
- 3 cups of chicken broth, seasoned.
- A cup of half-and-half.
- ¼ tsp paprika.
- Seasoned salt, ¼ tsp.
- ½ a cup of cooked rice.
- ½ a cup of cooked chicken, diced.
- Curry powder, ½ to 1 tsp.
- Salt and pepper, to taste.
Mix all of the above ingredients together and let it simmer over a low flame for about ten minutes. Once it is done, sprinkle with some freshly chopped parsley and your curried chicken soup is ready to be served. This recipe makes about 4 to 6 servings.
Chicken Noodle Soup
Ingredients:
- 1 packet of Knorr’s chicken noodle soup.
- 1 can of diced tomatoes mixed with sweet onions, or even stewed tomatoes.
- 2 cans of low fat chicken broth.
- Seasoned salt, ½ tsp.
- 1 cup of cooked chicken, diced.
Mix all of the above ingredients in a large crockpot and cook on a low flame for 6 hours. This chicken noodle soup is extremely delicious and very easy to make and serves 4.
