Ingredients for Cake
  • ¾ cup cocoa
  • 1 cup boiling water
  • 1¾ cup all-purpose flour
  • 2 eggs
  • 1½ tsp baking soda
  • 1 tsp salt
  • 2 tsp vanilla extract
  • 1½ tsp baking powder
  • 1 cup milk
  • ½ cup vegetable oil
  • 2 cups sugar
Ingredients for Frosting
  • 1 tsp vanilla extract
  • 3 cups powdered sugar
  • ⅓ cup milk
  • ½ cup (1 stick) butter or margarine
  • 2/3 cup cocoa
Process

Preheat the oven to 350 degrees F. Flour and lightly grease two 9-inch round baking pans. Take a large bowl and add in cocoa, sugar, baking powder, salt, flour, and baking soda, and mix well. Then add in oil, milk, eggs and vanilla. Again blend well and then beat on the mixer on medium speed for about 2 minutes. After 2 minutes, stir in boiling water and pour the batter into prepared pans. Bake for about 30-35 minutes, and when well baked, cool for about 10 minutes in the pan and then move to wire racks. Only when completely cooled, use the frosting recipe given below.

For frosting, take a bowl and melt butter in it. When butter melts, add in sugar and milk, beat well. After beating, if it is not to the spreading consistency, add milk. When done, add in vanilla, mix well.

#2: Lemony Sponge Cake
Sponge cake can not only be served at parties, but can even be eaten at breakfast! So the sponge cake recipe should be easy enough to be made every day. Here is such a sponge cake recipe which can be added in the list of quick and easy cakes.

Ingredients
  • ½ tsp cream of tartar
  • 1 cup white sugar
  • ¼ cup water
  • 1 tsp lemon extract
  • 6 eggs
  • 1 tsp lemon zest
  • 1 cup cake flour
  • ¼ tsp salt
Process

First, separate the eggs, then beat the egg yolk, until it turns dark yellow in color and very thick in consistency. Add in sugar, lemon rind, lemon extract and water. Beat well before adding flour. Now take another bowl and beat the egg white in it, until frothy. When frothy, add salt and cream of tartar in it. Mix well, until egg white is stiff, make sure that it does not become dry. Add this mixture to the yolk mixture, beat well and then pour the mixture into a non-greased tube pan which measures 9 inch. Bake at 165 degrees F for about 60 minutes.

Summer or no summer, ice-cream cakes are always a hit everywhere! And who wouldn't like to make ice-creams every weekend if there is an easy recipe! So let's take a look at an easy to make ice-cream cake.

Ingredients
  • ½ cup sour cream
  • 1 pt. ice cream, softened
  • ½ cup caramel ice-cream topping
  • 1 cup sugar
  • 1tbs baking powder
  • ½ tsp salt
  • ¼ cup heavy cream
  • ¼ cup canola oil
  • ½ cup chopped nuts
  • 2 eggs
  • 2¼ cups all-purpose flour
  • ½ cup butter
Process

Preheat the oven to 350 degrees and grease a 13×9 inches pan. Heat the butter until it completely melts, remove from the heat. Add in eggs, flour, ice-cream, sugar, salt, heavy cream, baking powder and canola oil. Mix well, pour this mixture into the prepared pan and bake for about 30-35 minutes. Add nuts, sour cream and topping and pour over warm cake.
