Sun Dried Tomato in Goat Cheese Kebabs
Ingredients
  • Chilled, 7 ounces goat cheese
  • 1 bunch basil leaves, fresh
  • 1 cup finely chopped, pistachio nuts
  • 20 toothpicks or small skewers
  • Packed in oil, 20 sun dried tomatoes
Preparation

Fill a vessel with hot water. Place the knife into the hot water and cut the goat cheese in half. Slice each half into 10 pieces and keep the knife in hot water to ensure you get a smooth cut. Make a ball of each goat cheese piece and put onto a cooking sheet lined with waxed paper. Add all the nuts into a bowl and roll a goat cheese ball into the nuts and coat ½ of the ball. Remove the oil from the tomatoes and place them on paper towels Skewer balls of cheese onto the skewer. On each piece of tomato place a basil leaf. Now add the tomato to the skewer with the goat cheese. Repeat this with all cheese balls. Arrange them on a platter, covered and keep refrigerated until they are ready to serve.

Seafood Fondue
Ingredients
  • Your favorite fish; it can be salmon, swordfish, shrimp or prawns
  • Vegetable oil
  • Greens for garnishing
  • Lemons
Preparation

First cut any two types of fish in 3 inch squares. Make sure you remove skin and bones. Now peel and de-vein your shrimp. Fill your fondue pot ½ with oil. Heat the oil to 375°F. Now place the hot fondue on your table. Make sure you keep the oil hot, if it's not hot the fish can absorb more oil. Arrange the raw fish pieces on large lettuce leaves or decorate it with greens of your choice. Give each guest their own fondue fork and ask them to spear a piece of fish and dip it into hot oil, as it happens in all fondue gatherings. When the fish starts to turn brown around the edges it's done and can be eaten.

Easy Appetizers for a Dinner Party

A dinner party is never complete without appetizers. At a small party you normally have more than 20 guests coming at your place. So why not treat them with delicious appetizers for a party that serve as a whole meal.

Taco Cups
Ingredients
  • 1 can of refried beans
  • 1 bag Tostito scoops
  • 1 cup salsa
  • ½ lb cooked taco seasoned meat
  • 2 cups shredded cheese
  • 1 cup black olives, sliced
  • ½ cup sour cream
Preparation

Arrange these chips on a large platter and layer them with beans, meat, cheddar, salsa, sour cream and black olives. Place this appetizer recipe for cooling until serving time.

Mandarin Chicken Peices
Ingredients
  • A 10 ounce can of mandarin oranges drained
  • 1 cup all-purpose flour
  • 1 cup of orange marmalade
  • 1 pound chicken breasts
  • ½ tsp salt
  • ¼ tsp pepper
  • 1 tsp of dried tarragon
Preparation

Cut the chicken into bite size pieces. Now add salt, pepper and flour in a bowl. Add the chicken pieces and mix well. Remove the chicken pieces and cook them in a skillet in melted butter. When the chicken runs out of juices, stop heating. In a separate saucepan mix oranges, marmalade and tarragon and boil them. Now pour this hot mixture on the chicken and gently mix to coat the chicken. Arrange the chicken pieces on a platter and serve with toothpicks.

Bacon Deviled Eggs
Ingredients
  • ½ cup mayonnaise
  • 12 eggs
  • 6 slices bacon
  • 2 tbsp shredded cheese
  • 1 tbsp mustard
Preparation

Place eggs in a pan covered with water. Bring water to a boil and immediately remove from heat. Cover the pan and let eggs remain in hot water for about 10 to 12 minutes. Now remove the eggs and let them cool. Meanwhile place bacon slices in a large skillet and cook over medium heat until it gets brown. Now wrap bacon in paper towels and cook in the microwave for 1 minute. Now peel the boiled eggs and cut them into half. Remove yolk in a small bowl, now add mayonnaise, bacon and cheese mash thoroughly. Add mustard. Now fill the egg whites with this mixture and refrigerate until serving.
