Dried Beans Recipes

Portuguese Style
Ingredients
- 3 cups drained red kidney beans
- 1½ lb ham hock
- 2 sliced onions
- 6 oz sliced pepperoni
- 1 diced carrot
- 1 diced turnip
- 2 diced potatoes
- 1 sliced cabbage (small)
- 1 stalk of coarsely cut celery
- 8 oz tomato sauce
- 1 bay leaf
- 2 teaspoon salt
Take medium skillet and place the ham hock, sliced onion, celery and bay leaf into it, add 1½ quart of water and simmer for an hour. Strain the ingredients and reserve the ham and the stock. Cut ½ inch pieces of the ham and add the remaining ingredients into the stock. Simmer the mixture thoroughly, until all the vegetables are well cooked.
Oriental Style
Ingredients
- 15 oz drained green baby lima beans
- 15 oz drained garbanzo beans
- 15 oz drained red kidney beans
- 8 cups of chicken broth
- 8 dried black mushrooms
- 4 slices of lightly crushed ginger
- 8 oz soft tofu (cut into ¾ cubes)
- 1 thinly sliced carrot
- 2 cups of Chinese cabbage
- 2 sliced green onions
- 1 large tomato (cut into 1 inch pieces)
- ½ teaspoon sesame oil
- 2 tablespoons lemon juice
Place mushrooms in warm water and cover them to soak for 30 minutes. Drain them out and cut into pieces. Take a skillet and add chicken broth, ginger and mushrooms into it and bring the mixture to boil over medium heat. Reduce the heat and cover the mixture, only to simmer for about 15 minutes. Now, add cabbage, tofu and tomato to cook for 5 minutes. Season this dry bean soup recipe with lemon juice and sesame oil. Don't forget to garnish it with the green onion.
Dried Pinto Beans
Ingredients
- 16 oz pinto beans
- 1 onion finely chopped
- ½ cup chopped celery
- ½ cup chopped carrot
- 1 cup diced and cooked ham
- 14.5 oz diced tomatoes
- finely chopped bell pepper
- ½ teaspoon cumin
- ½ teaspoon chili powder
- ½ teaspoon garlic powder (minced garlic will do)
- ¼ teaspoon leaf oregano
- 8 oz tomato sauce
- ¼ teaspoon salt
Combine all the ingredients into a slow cooker. Cover it with the lid and cook for 5 to 7 hours on low heat. Stir this 'dried beans crock pot' recipe well, before serving. Mexican Dried Refried Beans
Ingredients
- 16 oz refried pinto beans
- 1 slice bacon
- 2 garlic cloves minced
- 1 cup grated cheddar cheese
- A dash of ground cumin
- A dash of oregano
- A dash of pepper
- 2 roasted chili peppers, diced
Add diced bacon, garlic and spices to a pan and fry until the bacon turns brown in color. Slightly fry the garlic until it turns brown in color. Mash the refried pinto beans and add cheese and chili to it. Add this to the bacon mixture and fry it until hot and bubbly.
